This is called “frito chili pie” here in oklahoma. You make or heat chili then pour it on top of fritos. Then add cheese or mustard, or salsa. Tastes awesome with mustard only. Chow down folks!!!

Whoa! First time seeing 1 of your videos! Love this! Not crazy about beans, but I get the whole protein/fiber thing. Any possible subs for or at least a half and half? Would refried beans be ok (I know not quite as healthy but still protein/fiber-- and I can tolerate them better)? And for the record, the paper towel to soak up the grease--complete game changer!🤯 Almost 58 and had never heard or thought of-- and it made my day!! I hate trying to drain grease and even with a skillet with lid strainer, you need somewhere to strain it and even if you have a can or something, you have to wait for it to solidify before you can throw away... Simple little paper towel went and solved that! I'm thrilled beyond repair! Thanx so much and take good care!💝💝

There was a day I could eat half that casserole for supper. Herding livestock in -21 below on horseback in Wyoming for 17 hours, frost bit, froze to the bone and hungry I could eat the whole pan. Back at the bunk house I could down half a fith of Segrams 7 before tipping the bottle back on the night stand. The next morning I had to do it again and feed 10,000 head with a truck load of cube hay in the Powder River Basin twice a week. A dozen scrambled eggs and a half pound of bacon was the required breakfast. Add six slices of toast and a pot of coffee, then your ready for a 17 hours day of hard work. A pair of heavy leather gloves would only last a week. All for $150. per month. The best part I was off the last Sunday every month, payday. My favorite neal was a 32oz T-Bone, a basket of fries, a basket of Texas toast and a couple of Coors. The cook at the Tumble Inn couldn't believe someone could eat so much.
