Really appreciate your insight on growing things no one likes to eat! I always just give them away, but, it's true, it's a lot of wasted time. I just enjoy growing things. I do cherish the memory of the garden i had in the side yard of a house I rented in town. An older lady was walking by and came to talk to me about getting some eggplant from my garden. I was so happy to give her all the eggplant because i grew them for fun and i dont even like them. She was on a fixed income and was so grateful. I think everyone in towns should grow big gardens, mulched deeply for less work and less watering and give all the excess food to poorer families and seniors who would really appreciate the fresh produce. Iv given lots of garden produce to senior centers and senior housing complexes and food banks over the years. To me it is free food

I also grow things for fun/ learning. I don't like egg plant but I like knowing how it grows and how to grow it well and I like experimenting with different ways to grow things. My family doesn't like eating most things. My kids will eat melons and some salad and carrots pretty much anything else you could grow they don't like. They complain at every single thing i make and my partner is super picky as well so if I was growing what my family would be happy to eat there would be no point in a garden at all. I just share with friends and family but I'd like to keep scaling up so I can give more and more away.

@@alorastewart7091 Don't loose hope. I don't know about partners - they are grown up and their taste maybe fixed - but children can change. My son hated all vegetables and would only eat fruit, yoghurt, Weetbix and Promite sandwiches. One day I served pizza with no vegetables. He looked at me and saaid, "I want a real meal." I asked, "What is a real meal?" He replied, "One with vegetables." I was blown away. Now (grwon up) he always cooks meals with lots of vegetables and even eats salad too.

@helenebennie3961 I figure the more we transition into scratch cooking the more the kids will get interested in it. I grew up on processed meals and up until this last year that's all I really had half an idea how to make so considering my older kids are 10 and 9 it's a big change for all of us. My toddler however is completely unbothered so at least I have one on board.

Y'all nailed this one! I am a 61-year-old woman learning to homestead in my apartment. I can access my church's community garden so that part is easy enough. For the past couple of years, many homesteaders have said, "Only grow what you will eat." I heard Michelle repeat it in this video AND IT FINALLY MADE SENSE! I, too, have grown exotic veggies and canned things because everyone else did and wasted so much food. It is sickening to think about it. And it also explains why, even though I have many jars of food put up, I still drive through places on my way home from work. Wow. This winter I plan to give away 90% of my garden seed collection and narrow it down to what I actually eat! The sweet potato, beef, and lettuce meal is something I would absolutely gobble right up. In fact, I sometimes eat sweet potatoes for dinner. Thank y'all very much for everything I am learning!

That was my biggest lesson when gardening. I use to grow all the exotic stuff & they'd not get eaten. Now I concentrate on cooking leafy greens, tomatoes, peppers, root veggies, onions, garlic, potatoes, green beans, & squashes. Things we love to eat.

I love the idea of a Monday reset. I also do not enjoy cooking. I think getting things prepped ahead of time would make dinners easy and quick which be a game changer for me. Thanks so much for the tips and for keeping things simple! It’s so encouraging to see simple healthy meals that don’t require a ton of ingredients and time to make from scratch.

Loved this video!!! Please do more like this. I don't have a homestead with animals, but I do garden and can food. I'm really working on making my own things instead of buying pre-made from the store. I have been making my own bread for about 3 or 4 months consistently now and don't buy it from the store. I make my own hamburger buns and flour tortillas. Nothing better than homemade. Sometimes the things that you show sparks an idea of what I can make with what I have. I'm really trying to figure out where I can fix up a place like you have that I can grow lettuce like you do by the house.

I have been making my own bread for 7 years now. I have learned to double my recipe and I use some of the dough to make cinnemon rolls. Just roll out. Slather butter all over the rolled out dough. Sprinkle generously cinnemon and sugar. Roll and cut the log. Crouton Cracker jacks has a great cinnemon roll recipe but I just use my bread recipe and use his caramel and pecan topping. This makes my bread baking day even more fun!!!

For those of you who don't have leftovers for lunch, you're missing out! Many foods taste better on the 2nd day. Thanks yet again to Cody and Michelle for yet another very relevant video to home farming. Don't know if this can be on homesteading due to the demands - one thing we do here as both of us travel for work, we prepare everything but the meats for the week on Sunday- including chopping onions and cutting veggies. Saturday night is at the farmer's market then supermarket, Sunday afternoon is the food prep. This way we always know whats in the fridge and what we want for the following week - repeat of the tastier foods and usually something new for at least one meal.

The cream is easy for the cow to hold back because it's the last part of the milk to leave the udder. When the udder is nearly full, their muscles aren't strong enough to hold their milk back against that pressure even if they wanted to, but when it's nearly empty, it's easy. Human lactation works the same way - the foremilk is more watery, and the hindmilk is more fatty. This means in hot weather a baby can have frequent small drinks and stay hydrated, but then when they're tired and want a full happy tummy while they sleep, they have a longer feed and get all that cream as well. If you want your cow not to hold back the cream, giving her an hour after milking time before reuniting her with her calf will make a big difference. They don't really hold the cream back to reserve 'the best bit' for the calf because what the calf needs is a balanced diet, not extra cream. If you turn a hungry calf loose on a cow who has just been milked out, she's got no food for the baby and the baby is going to beat her up for it - you've seen how calves bunt when they want more milk! That hurts, so the cow learns to hold back a bit of milk so the calf won't hurt her. If you give the cow time to make more milk after the milking before she has to feed her calf, eventually she'll stop bothering to hold back that milk - but it's easier if you do this right from the start, so she never gets the habit of holding back.

We do the same with our sourdough starter. I love how easy it is to make a "flatbread" or breadsticks. Our favorite though is making pizza crust from it. Same process in the cast iron. We top with homemade pesto, homemade mozzarella, and sliced jalapenos. So good! Beautiful meals!!

I’m the primary cook in our house and I agree with using the leftovers. But I try to make a second dish with them. The other day I took the leftover roast (minus the veggies as those were already eaten) and combined with the leftover beans (dried black and red beans) with some added spices. Oh, now will be one of our favorite recipes. 😊 So give it a try folks, you never know what you’ll come up with.

Helpful hint from a granny....To get crispy potatoes rinse, rinse, rinse until water is clear. Then DRY them with a towel as much moisture you can get out the better. If you want crispy hashbrowns do this and put them in a very hot cast iron skillet cover for 3-5 min. Then flip. Oven roasted....just do the wash rinse and dry. Get the starch out. You two are such an adorable couple. You remind me of the Hollar Homestead Ben and Meg.

@@morethanfarmers Forgot to mention: Put lots of your choice of oil or fat in skillet prior to frying. I do mine in the little 6" skillet that way it is easy to flip in one piece. I know that is not feasible for a family though.

I truly think the basics of life are the best, family, fresh food you grow or at the very least know the provenance of.My nephew and his wife have a few acres. They grow loads of stuff and can it too.They raise chickens and pigs plus they both have full time jobs!! Try using one of those roasts as a base for a Chili instead of mince....if you have the time to let it go for a few hours in a Dutch oven and top it off with bone broth if you need to.....when you pull that meat apart at the end just before serving,it's literally a game changer

You need an outdoor kitchen in the summer time it’s great keeps the heat outside and in spring and fall on days where it’s not really cold it’s a nice place to cook and hang out

May I make a small suggestion, when you do your meal prep if blanch the pots and carrots for about 5 mins in a steamer. This will soften the outside alittle and with this will come little crispy it’s and the best roast potatoes ever. Have a go I promise if you roughen the outside of the potatoes they will be phenomenal, carrots are so sweet roasted but can burn on the edge, I happen to love it.

Great information on growing what you know you eat. I tried growing all the things and we will eat all the things but it just isn’t necessary and my space is limited. I cook from scratch 3 times a week and we alternate leftovers. I also big batch steel cut oats and switch up what goes in them, such as Greek yogurt and fruit or nut butters and cacao powder and maybe a few dark chocolate chips, cinnamon and melted butter, walnuts and banana, fruit compote and peanut butter etc. That way it doesn’t feel like eating the same thing. I make ( for example ) several dozen pepperoni rolls and healthier no bake cookies and that’ll be the snacks for the week. Sausage balls and breakfast burritos are fun.

I love you guys videos! A family favorite super easy meal that can also be made ahead is sausage green bean potatoe casserole. You cube washed unpealed potatoes and place in a 9x13 pan. Add a chopped onion, sliced kielbasa sausage and a quart or more of green beans. At some water, olive oil, paprika, garlic powder, salt and pepper and bake covered for an hour at 375. We make this the day before and let it sit in the fridge until the next day when we need it for church fellowship meal. Btw, its still amazing warmed up the next day as leftovers. 🙂( Thought Michelle might appreciate that fact) 🙂 Keep up the amazing be content! Elizabeth Alexander

Have you tried Kale chips? You take Kale and make them into chip size. Coat them with Olive oil and sea salt and bake them in the oven until they start to brown then pull them out and let them cool. They are soo good. Anyway, you may have tried to that already, but I love them.

If your family doesn't like "leftovers" you can do a different meal with the 2nd roast or half of a chicken, etc.

Extra greens are a good thing to grow for your chickens. Especially collards and mustard greens. Your chickens will love them and lay better and less store bought feed.

So eggplant was a difficult one for me to make meals from as well. I finally found a way to make it where my family enjoyed it. Very simple. I slice it then put it on a flat cookie sheet in the oven with pizza sauce and some mozzarella and my family loves it. Especially the second day for some reason it taste better the second day.

My youngest daughter was a picky eater. I had a large organic garden and sixty-two organic fruit trees. I finely chopped up swiss chard, bell peppers, onions, garlic, and other things and hid them in the food l made. One day, I was out of a few things and was making a family favorite for dinner. My youngest daughter wasn't happy about the taste and asked me if I used a packaged taco seasoning. I didnt have a red and green bell pepper to mince up and add to the ground beef. That night, I just had minced onion, garlic, salt, pepper, and a few other seasonings. Everything she said she didn't like, she really did. 😊

I’m from the south and we often hide vegetables in different dishes. Eggplant is good smothered down with onions and garlic. Add ground beef and rice into a casserole dish. You can top with cheese and bake to melt the cheese.

I love your lettuce greens green house along your home. I have also learned that if I have an abundance of garlic and onions I take a snowy day and peel and chop my garlic and freeze it. No waste and I always have garlic on hand. I do the same with onions. If they are starting to sprout I chop and freeze. Potatoes once the sprouting gets out of control I start canning them. Canned potatoes make EXCELLENT potato salad. Love your channel. Love your content.

I am so thrilled to have found your Channel!!! You guys have inspired this mama to start growing more of what we actually eat. I am very guilty of years of growing things we just wasted. No more hobby garden for me. Can I ask how much pf each plant do you grow to feed your family of 6? We are a family of 6 over here as well. The oldest is 10 and the youngest almost 5. I want to be able to feed us manly from the garden this year.

One tip I learned about measuring ingredients when you measure with your heart not with a spoon is to use a kitchen scale before and after using a spice so way the chili powder before you use it and then weigh it after you use it and then there’s an online converter for grams to teaspoons etc. I hope that helps but that’s only if you have a kitchen scale if you don’t have a kitchen scale I don’t know I found one at Walmart though for like 10 bucks lol

“Good food can stand on its own” thank you for this. I grew up on a farm where we raised our own beef cows and we only seasoned with salt and pepper. My husband’s family covers everything in some kind of sauce or cheese 🤦‍♀️ drives me crazy 😂 Also I’ve started doing a Monday reset and it’s a huge game changer for getting things accomplished

Our left over roast beef get more seasoning and turned into shredded beef enchiladas. Just a little seasoning, some cheese and tortillas topped with red sauce and back into the oven to heat up. I often roast five pounds or more of beef at one time. Great video. God bless y'all and keep growing

I love this kind of content because making things from the garden taste good has been a real struggle for me. I think I am over seasoning them and trying to get to fancy. I end up ruining many dishes. I am not giving up though. I love to cook, I'm just not very good at it, yet. I'm trying your marinade on some boneless pork chops tonight. Hi Codi and Michelle, thanks for this great Meal Prep video. I always cook Pot Roast in a pan with the vegetables. Will have to try searing it on both sides and cooking it in the oven with some Coconut oil and Wine. That looked really delicious. Thanks for all of the good cooking tips. Very interest fact about the cow holding back some extra milk for their calf.
