I feel like you can do both but it depends what flavor do you want. If you want a stew with a hint of meat in it then use chicken and maybe beef. If you want all vegetables use the vegetable stock. I’m probably gonna buy vegetable stock since I want a stew with no meat taste in it.
This turned out Absolutely Delicious. I adjusted it slightly and used 4 cups of (full sodium-fat free) beef broth and 4 tablespoons of flour cause that's all I had. I also used 1 1/2 cups of Half and Half cause I like it extra creamy. Love the slight sweetness the Marsala wine brings to the mushrooms also. Will definitely be keeping this recipe in my recipe book, Thank you.

Culinary person here! You can use milk instead of broth if you want. I personally would finish it off with heavy cream and purée it in a blender. Cool thing is you can do this other ingredients than mushrooms like parsnips or broccoli with this recipe.
I just made this soup and it was perfection! I used the cremini mushrooms. Very easy to make. I got rave reviews from my mother-in law whose compliments don't come easily!

I just made this soup following your recipe to the T. Was concerned about my white, shiitake and oyster mushrooms turning bad. Plus I had some left over parsley and wine in the frig. The soup came out absolutely scrumptious....
I've made vegan using homemade oat cream and oil instead of butter. I prefer white wine for cooking and this ended as a perfect dish. The broth was homemade too. Perfect recipe, I loved it!
Made it myself and this was so damn good. But instead of bouillon I instead bought chicken breast meat, chopped it up and added it along with the mushrooms. Great taste, but the smell of garlic lingers for hours, so you guys have to get breath mints if you don't wanna brush.
Why I like your videos -- I don't have to sit and watch a 8-minute video while the presenter is telling me how they ate that dish when they were a kid and the sun was shining and the birds were chirping. My only note is that you say exactly what you add, for example, what kind of herbs?

I made recipe today it a nice cold and gloomy day out. I made it just instructed even pre measured everything. The result was so dam delicious!!!! Good one specially with toasted bred for dipping!!!!
