Ingredients:
2 T Virgin unrefined Coconut Oil
2 Shallots chopped - or 1/2 yellow onion
4-6 Garlic Cloves minced
2 T White Wine
Sea Salt/ Cracked Black Pepper - to TASTE
1 bunch asparagus 9cut tips/and stalk about 1 inch)
1 cup Organic Shiitake Mushrooms - rough chop
1 Lemon juiced - and 1 T Fresh Lemon ZEST
Parsley chopped (save some for topping)
Red Onion Chopped for Topping
1/2 - 2/3 Cup (Non Guar Gum preferred) Coconut Milk
Nutritional yeast as sub for parmesan to keep dairy free
1. Sauté the Shallot/onion 2-3min til translucent add the garlic stir for another 2-3 minutes until fragrant
2. add the wine to deglaze and a little more coconut oil add in the apargus and mushrooms cover to soften for a couple minutes add the sea salt/pepper
3. uncover add the Cauliflower Rice and the coconut milk stir and cover for another couple minutes - remove cover let some of the liquid cook off add in the parsley
you are done!! not over cooked an tons of flavor - garnish with the red onions, nutritional yeast and extra parsley
