INGREDIENTS (Serves 4)
gorgonzola cheese: 4 oz (120 g)
taleggio cheese: 3 oz (80 g)
gruyère cheese: 3 oz (80 g)
pecorino cheese: 4 oz (120 g)
butter: 1 oz (30 g or 2 tbsp)
all-purpose flour: 0.5 oz (15 g)
whole milk: 2 cups (450 ml)
rigatoni: 320 g
HOW TO CHOOSE CHEESES CORRECTLY
combine a blue cheese (with mold) with two soft cheeses of your choice. The fourth cheese will be a semi-hard cheese.
Flavor-wise: combine spicy cheeses with sweet ones while maintaining the predominant cheese's base note intact.
Alternatives:
Blue cheese: Gorgonzola, Roquefort
Soft cheese: Taleggio, Camembert, Fontina, Époisses
Semi-Hard cheese: Semi-stagionato Pecorino, Parmigiano Reggiano 24 months.
