Chicken Wings are things of beauty. And tasty, too. So I finally got around to making a video where I smoke up some Crispy Chicken Wings on the Weber Kettle after giving them a delicious rub and preparing two dips as the perfect accompaniment.

Wing Rub Ingredients
1 TBSP Granulated Garlic
1 TBSP Kosher Salt
½ TBSP Smoked Paprika
¼ tsp Cayenne Pepper
3 tsp Baking Powder
Honey Pepper Dip Ingredients
½ cup Honey
2 TBSP Fermented Calabrian Chilis
Lemon Garlic Dip
3 TBSP Mayonnaise

1 tsp Minced Garlic

I've battled chicken for years. Ry got me squared away. I used a different rub, but the 4/1 baking powder and 24 hours in the fridge is dead solid advice. Had the best wings of our life during the superbowl tonight.

Great cook! Who doesn't love wings? I'm a flat guy (not that I don't love drummettes), but your mileage may vary. The baking powder really does work and the vortex is a wing machine. Those 2 dips look great. On my list to try.

i just got a vortex for my kettle today and the first thing i cooked with it was wings, hands down best accessory you can buy for the weber kettle, i'll never cook wings any other way. All i used was some pam and a rub called Pappy's and let it sit for about an hour. I left the sauces on the side for the family to choose.

I did these last night and they were fantastic. I didnt quite get the crisp on the skin to the same level, certainly wasn't rubbery though, but I think that's because I didn't put enough dry rub on them, but still .... they were amazing. I'm going to be cooking up another batch this coming Saturday for some friends and I just know they're going to love them. One of the best things about making trips to the US is enjoying some tasty wings and now I can make them myself at home, thank you.

I just tried this out today. The weather was perfect today in California, so I thought I'd try this recipe out. I just want to say thank you for the recipe because everything came out right. Wood chunks on the weber kettle made the chicken wings even better. 😋

@Cooking With Ry The only issue I had was keeping the temperature low because almost immediately, the temperature on the weber kettle hit 500+ . Other than that, the chicken wings were a hit my family loved them, and bqq sauce we used was Buffalo Wild Wings' mango habanero 🔥 🔥 🔥

I got a Weber recently. My wife would never agree to have wings. We got caught short and didn’t have time for the pork ribs we bought, so I got her to agree to try a nice short wings cook. Used this rub and they were amazing (I knew they would be, I love wings). We didn’t even use any of the sauces/dips we got because the wings were SO good. Now she’s asking for wings!

Good video, Ry. I always get crispy skin without any baking powder, or anything else. I coat in olive oil, season and let them sit while the coal is getting ready, then let her rip.

Nice. I just did wings on indirect and finished with cast iron. 5 types. Garlic parm, teriyaki, homemade BBQ sauce, Frank's red hot wing sauce, and plain with my own rub. My friend said they were the best he's ever had.

Ry, I seen a trick for crispy smoked wings. We usually smoke from 225 to 250F ... well turns out that makes chicken skin soft. but it you go up to 275 on your smoke, it will be crispy smoky wings. No baking powder or starch required. I seen your thermometer on the kettle was at 400, so that was pretty hot and fast indirect.

Definitely going to try this on the next turkey or chicken I smoke. Since the majority of the time you can't get that crispy skin. Actually I have been thinking of adding cornstarch but if the baking powder works then no need trying to reinvent will.

I can't believe I missed this video of yours! 😳 I was searchimg for smoked wing videos and found this one. I had put tje wings in the fridge over night on a baking pan to dry them out. I went back this morning and made up your rub and added it to the wings, then put them back in the fridge. Should get about 6 to 7 hours with the rub. I am always trying to get the skin crispy. Yours looked awsome!!! Thanks for the Baking Powder trick.

I saw a cool tip for cookin'wings. Since they seem to stick to grates even if you oil them, this trick works!! Get a raw potatoe + cut it in half. With grill hot, rub potatoe on grates all over. It don't look like much is happening, but thats all it takes. The sticking is greatly reduced! Try it out i think you'll be happy.

I do 25 wings, different ways, every Friday night on my Weber kettle. After patting them copletely dry with paper towels I apply "CORNSTARCH".."lightly"coating them in a freezer bag,by shaking them. I cook them just like that. after I apply the sauce it is absolutely amazing how the cornstarch coating crisps them, even after sauce is applied. Too much cornstarch you have a mess. Has to be a light coating. I have also done shake,and grill method, adding spices and cornstarch to the freezer bag. I am Buffalo NY bred, so no I have never had any complaints.....Try it.

I was just thinking of making chicken wings. I love them. I could say I have obsession about them. Only I don't have smoker or grill so I use oven. I usually use wings that are lightly salted (salt brine) and season them after the oven. Lay the wings on the oven plate covered with baking paper and let them warm to room temp. (approx. 10-15 min). While waiting warm the oven to 200C (390F) degrees in circulating oven or 225C (435F) degrees in regular oven. Cook wings in center level approx. 20 min in circulating oven or 25 minutes in regular oven. Keep eye on the wings at the last 5 min, wings will get crispy skin and some color, but you don't want them to burn. Take wings out of the oven plate immediatly, don't leave them to sit on their own juices. Now you can roll the wings in the seasoning you prefer or eat them as they are. (I use teriyaki and soya sauce, some times bbq sauce.) Put the sauce to the large bowl (approx. 2 tablespoons for 0,5kg/1lbs of wings) and toss wings in. Roll the wings so they get even coating. Place wings to the plate and eat with sides you prefer!

I tried this recipe and they were a smash hit with the family. They've been begging me to make them again. I had some chicken thighs in the freezer, so I'm going to experiment and try this same recipe with those. I'm betting they'll turn out great.

Baking POWDER. Some people use baking soda, but it can have a metallic taste if you accidentally use too much :)

It's pretty even since the Vortex radiates quite a bit of heat through the metal outward :)

What is your approximate ratio of untit charcoat to lit charcoal? What I'm seeing is approximate 50/50. Can you clarify PLEASE! Your video is the best I've seen for wings!

What size kettle do you use? Have seen it in a number of your vids and I think it is the 22"... I am looking to purchase one and the 26" is a beast. Wings look great - they will be one of my first cooks no doubt. Good vids.

I agree with everything you did here but you have to try taking wings to 203f some time. They handle the heat well and they are like a brisket in that they completely fall apart tender and become super juicy around 203f but a couple degrees more and they dry out. Give it a try you won't he disappointed, I won't cook wings under 203 anymore.

Ry I have a question that’s not related to wings per se. could you smoke a meatloaf on the kettle using the vortex or would it get too hot ? Forgive me for asking such a seemingly dumb question but I’m actually new to using a Weber kettle

Not a dumb question at all. I’ve done just what you describe. The key is using the vortex with the wide end up and not lighting all the charcoal at once. That way it functions at a bit lower temp when the vents are adjusted, sort of like a Slow n Sear 👍

Ok, I have the SNS already....If I was to take and fill that basket with fully lit coalsand open the vents let’s say halfway on top and bottom would it still get too hot too fast or would it be just right....

@@bobbywade3069 When I dial in the SnS I can usually get it to hang around 275 F for a long time, so you have to dial those vents in for your conditions. But I've done several meatloaves with the SnS on the kettle and they come out great :)

I personally think it does because it seems to generate higher heat, but I’ve used the baskets with good success.

You could use the Weber briquette baskets together in the center or just make a good pile of charcoal 👍
