For great grilled crispy wings I use corn starch and double the seasoning. You can even toss in sauce but don’t let them sit in sauce and no spritzing during cooking. I even do this to leg quarters. Good Grilling.
My go-to for wings is to pat them dry, shake kosher or sea salt, then baking powder and dry them in the fridge for the day. When is time to cook, I spray a high temp oil on the wings and grill em! 😋
Thanks for this! I have always had precooked breaded wings 😮but I want to start doing from scratch wings. Since I do like breaded wings I will definitely go with the 50-50 mix or cornstarch and flour. If I do it on the Weber I will add a piece of oak or apple wood. My wings will get sauce!
I've tried both the corn starch and the baking powder method. Actually I tried baking powder with flower. It was VERY crispy, almost like they were deep fried. My wife said just a bit of the flour came through on some of them, otherwise they were great. It's been a very long time since I tried the cornstarch but I did remember that it tends to overcome or dilute the flavor of your seasoning. With both cornstarch and flour/baking powder I needed to add a lot more seasoning to make sure it came through. I haven't tried just baking powder and seasoning yet but will next time I do some wings. Another good one!
Ok , I just tried the rub, fiesta chicken rub as it was the rub I had on hand, baking powder and I had KFC seasoned flour I ordered online. Your suggestions and the ratios were spot on! I’ve been looking to try and duplicate KFC for awhile and it really turned out crispy and as close to the flavor I was looking for! Maybe not for everyone but thought I’d share.
I've used similar methods to grill wings. From my personal experence, baking powder wins if your using a dry rub and straight corn starch with no flour or seasonings wins if you are using a sauce to flavor your wings. Just cornstarch without the flour stays crispy for a while even after being saturated in buffalo sauce. It loses its crispness to the sauce eventually, but it lasts a while.
All the wings looked good but if I had a preference just by looks....I would say the first ones with just the seasonings. Great video...keep them coming! :)
I took legs, wings and thighs put in flour with your favorite seasoning. Grilled with charcoal and cherry wood indirect heat. Wow!!!! Never do it in the oven again. What really helped for crispiness was spray it with butter flavored pam about 15 minutes before it's done! Next time I will get a spray can of duck fat and use some mustard as binder. Don't have a vortex though. Is it made out of stainless steel? Could possibly make one. Always up to saving money. Grill on!!!!!
I use the oven - render at 250 for about 45 min. Then increase oven temp to about 410 and go about half hour or until Golden brown. Frank’s hot sauce over them to finish.
