French bean-jam buns
(Ingredients) For 6 pieces
150g bread flour
50g weak flour (or 200g all-purpose flour)
1 tablespoon (10g) sugar
1/2 teaspoon (3g) salt
2/3 teaspoon (3g) instant dry yeast
130g lukewarm water
240 g bean jam
(For the finishing touches)
A dash of cooking oil
white roasted sesame seeds, black roasted sesame seeds, walnuts
(Summary of preparation)
Put the ingredients into a container and mix for 2 minutes.
First fermentation until doubled in size.
Let the dough release its gas and cut it into 6 equal pieces.
Roll out the dough and let rest for 5 minutes.
Roll out the dough to 10 cm in diameter and wrap the filling in the dough.
Press the dough flat with your hand to make a hole in the center.
Second fermentation until doubled in size
Brush the surface with cooking oil and put the topping on top.
Bake in a preheated oven at 210C/410F degrees for 12 to 15 minutes
