When using deep fat, NEVER use more than 1/3 depth oil in the pan. And be very careful about splashing it, as its a massive fire risk. I hope you know how to put out a fat fryer fire using a wet cloth to cover, then leaving covered until its cold. The food looks nice though, i love szechwan chilli beef which i think thats based on.
