And an illustration that the common man doesn't know how to measure weight in SI units. Kilogram=mass, newton=force, which is what weight is. A kilogram's weight can vary depending on which gravity well, or where in said well it is, but a Newton is a Newton no matter where it is
A kilogram is a measure of mass, not weight. A kilo on the moon weighs less than a kilo on earth. Gravity is force, so weight would be measured in Newtons (in SI units). Therefore, "Which weighs more a kilogram of steel, or a kilogram of feathers?" Is a question that can't be answered, because their location is unknown. If one is at sea level and the other on top of a mountain, the one closer to the center of the Earth's mass will weigh more. The proper question is "Which weighs more, a volume of feathers that exerts 9.786 Newtons of force, or a volume of steel that exerts 9.786 newtons of force?" (the force exerted by a kilogram at sea level, due to gravity). Also Nott, in this video, is confusing density, not volume, with weight. The volume of a kilogram of steel is much smaller than the volume of a kilogram of feathers. If she was doing the latter, she'd think the feathers weighed more.

I think sam plays her intelligence as being naturally intelligent in only a few subjects and being a quick learner but other than that she isn't the brightest and probably didn't have the best of educations since she grew up in a samll farming town

If you were to weigh exactly 1kg each of steel and feathers in an atmosphere, the atmosphere will be introducing a force of buoyancy that will make the steel weigh in at less than the feathers on an accurate enough scale. Add in Molly's charisma and he could absolutely talk his way out of that
I feel like Sam plays her intelligence as more street smarts and critical thinking in terms of mechanics and alchemy and less as academic. I'd like to think she pondered this a long time by herself and eventually realised what they meant but it really took some moments of quiet contemplation to put the pieces together in her head

To woosh a bit here on the actual joke (having a laugh on the guy who doesn't get it), it's the phrasing that is wrong. Steel isn't heavier. It's denser than fathers not heavier. So it takes less steel by volume to get a kilo than fathers. But... I guess we all know that.
