Day 6 and we're still trenching by hand. It can get a little discouraging when you don't have an entire day to devote to a project, but little by little we'll get this chicken garden done!

My Dad lived in Wilcox Arizona when I was a kid and I would have to go stay with him in the summer. So when I was watching your videos I thought the topography looked very familiar. I saw a food wrapper from the bar you were eating in said the name of the town you were eating in and sure enough you guys are in that area. I use to take my Dad back to that area to visit his friends until he died. I really enjoy your videos. You do a great job with your film making. All of you are hard workers, especially the wife. For the tea, I suggest grating the ginger and using a whole lot less. You're really only getting the surface area of the ginger when you steep it like that, so all of that ginger in the middle of the chunks is going to waste. (Unless you're doing something else with it after, other than composting.)

There's a video called sow the land see if that helps u chicken coup making.

Chai Tea looks delicious, but I have to do a sugar substitute. Not a fan of Monk Fruit, and with tea/coffee/milk added, the small after taste of Stevia would be nonexistent for me. I will keep looking for a 'me' recipe. Wherever the dinosaur is, it should be the "Fall For the Content!" shirt! hahaha. I think Aida has as much energy as nine-nine! Trench work is back breaking. Sometimes if you are near a Halal market or Greek market they will have the whole cardamom seed pods at their spices section. Perhaps even a Oriental grocery shop would have them. I think it would be hard to find them at a regular grocery store.

The concentrate is way too thin. You can't save anything like that. Ginger doesn't have to be peeled, most of the good stuff sits in and directly under the peel. Just wash well. Ginger from Peru, for example, is much more flavorful than ginger from China. It is usually very watery. For this purpose I would grate the ginger much finer so that everything is cooked out. Cardamom, cinnamon and pepper also have to be crushed (or bought powdered), otherwise the spices cannot be properly boiled. You then need a lot less, especially the expensive cardamom. Instead of white "empty" industrial sugar, it is better to use brown cane sugar or e.g. agave sugar. If you sweeten with honey or maple syrup, the concentrate should be cooled down to at least 40 ° Celsius beforehand. You can get black tea cheaply in bulk, look for Asian shops, forget about Rooibos, it is boring. : D
