Crunchy Egplant Snack: Simple And Delicious Vegan Recipe

This crunchy and delicious eggplant snack is perfect for a gathering with friends, as a starter, or to accompany a movie night, and I promise you're going to love it!
Cup's measurement: 250 ml
INGREDIENTS:
2 eggplants
Salt to taste
Black pepper to taste
1 teaspoon of smoked paprika
1 teaspoon sweet paprika
2 teaspoons of garlic powder
1 cup of wheat flour
1/2 cup cornstarch
Frying oil
METHOD:
Add the flour and cornstarch to a large bowl along with 1 teaspoon of garlic powder, 1 teaspoon of smoked paprika, salt and pepper to taste, and mix to combine.
Put on the oil in a deep pot and heat it over medium high heat.
Peel and dice the two eggplants, then add salt and pepper to taste, sweet paprika and garlic powder, and mix to combine.
Add the seasoned eggplant to the flor mix, and stir to cover all the eggplant cubes
When to oil is hot enough, add the diced eggplants to the oil in batches, and fry them until golden brown.

Love your show always get new ideas from you, thank you!! I Love this dish, I make it differently (simply because I hate frying): First I cut the eggplant in half and put in a covered bowl in a microwave for 10 minutes. After 10 minutes I put them on a mash to drain the bitterness for 5 minutes. During that time I prepare the coating in 3 boxes: Box A with flower, Box B with a liquid batter (I like chickpea flower, some water and spices). Box C with breadcrumb, oil, salt and pepper, the texture should be like beach sand. I prepare an oven on ~200-220 C and a oiled pan (you can use parchment paper) Now comes the fun part. cut the eggplant anyway you like it (I like slices). Put them in box A, close it and shake Box B, close it and shake Box C, close it and shake. Put it in the oven for 10-15 minutes before flipping to another 10-15 minutes. The coating becomes crunchy and my kids love it.

Oe yummy ... QUESTION: What if you leave the peel on? Would that affect the crunch? Also, what about double frying like with French fries? Would that make them even crispier/
