I've written the recipe down with all the instructions you've given, so i do not miss a step. I've had it before so i know i love this candy. Now lets see if i can make it because it's hard to find. Recently i found some but it wasn't like this so must have been made differently. This looks like the kind I used to get back in the 90's that was made by an Elderly Mexican lady in the neighborhood who sold it in the little market down the street from where I lived at the time. I love this candy! Every time I go to Mexico I have to get the clear one with the big black seeds but I never see it where I live. Do you know what type of pumpkin/squash it might be? I just grew my own pumpkin and want to try this recipe. How long does the candy last? Does it have to be refrigerated?
Hello .. Looks delicious! You started out with a 8 pound pumpkin and are using half for this recipe. You didn’t say how much the pumpkin weighed after removing the seeds, skin and fibers for this recipe, maybe 3 pounds left?
@@rockysjewel There are different types of pumpkin and some are more palatable than others. Jack-o-lantern pumpkins are more stringy and watery, pie pumpkins are more dense and fleshy - both would work, but the outcome will be different.
