Hi everyone!! I am sooooo excited to finally be sharing my Congri recipe with you all! Like I mentioned before, this is the pressure cooker version, and I will definitely be making future video showing how I make it on the stovetop. I hope you give the recipe and try, and I hope you enjoy the video :)
For the beans:
- 12 oz. of raw black beans
- 8 to 10 cups of water
- Pinch of granulated sugar
****BEANS MAY REQUIRE MORE COOKING TIME TO SOFTEN IF THEY ARE NOT PRE-SOAKED AND/OR DEPENDING ON THE POT YOU MAKE THEM IN****
Arroz Congri:
- 3 tbsp. extra virgin olive oil
- 1/2 red onion
- 1/4 red bell pepper
- 1/4 green bell pepper
- 6 cloves of garlic
- 1/2 tocino (smoked pork belly)
- 2 chorizos
- 1 tsp. cumin
- 1.5 tsp. salt
- 1 tsp. sugar
- 1/4 tsp. black pepper
- 1 tbsp. white vinegar
- 1 packet sazon goya (culantro y achiote)
- 3 cups long grain white rice
- 3 cups water (reserved from when you cooked the beans)
