Looks like a delicious combination. Two suggestions, start cutting the loin from the side at a 1/2" depth and you can roll it out flat as a pancake, second is learning a proper butchers knot. The latter keeps one from guessing how much string is needed plus looks awesome at presentation. Thanks for sharing.
