Would a Flambe of Cognac around the Fillets be out of line? I have a good bottle, and am always looking for ways to taste it to be sure it hasn't spoiled.

What would Mme.StAnge have used instead of the tomato concentrate I wonder. Tomato concasee??

Hey! She stipulates tomato paste/ concentrate, but a whole tomato reduce down after the shallot cannot be wrong. I also reduce canned tomato purée to make paste.
