Tim, did we miss a step? At the beginning it was explained that you were looking to reduce weight by 23 percent and you would check in about 6 weeks. If it hits the 23 percent weight in 6 weeks or so, isn’t that when you wash the salt off , sock it and then t goes thru the summer sweats? You jumped from salting, thru summer sweats to washing. What am I missing.

Hey Tim, lest not to forget the saying, "If momma ain't happy then no body in the house is happy", happy wife, happy life too. Also send home the paycheck and bring her a diamond every 5 years. Words my dad told me 24 plus years ago. March 12, 2019 me and momma will be married 25 years. My dad was a hill billy from North Carolina.

Ok I have to show my ignorance here for a question. In the recipe he gave it was red pepper. What kind of red pepper? I know it was ground and the first one that pops up is cayenne. Can you tell me if that is the right pepper for this please.

To disguise himself from being recognized by the ham police. They want to arrest him for making the best ham in the state. That makes enemies....hehehehe

okay I've done the first two steps Tim now we're going to the summer sweats it is now just about August for me do I go ahead and take them out of the fridgerator and go ahead and hang them up in the Smokehouse until fall that's why I understand and it will be just fine they smell really good they've been in the refrigerator at 37 degrees the whole time thank you

Everyone would like to know what happens after the 6 week mark? I have watched countless videos and talked to my local Ag agent and don't know what to do after curing for 6 weeks. Guess I will just smoke it so it doesn't spoil ?
