I believe what Curtis has gone for is what he likes in a pie. After having lived in Australia and New Zealand for me that recipe is generally more of a classic New Zealand pie. That being said those ingredients would make a delicious pie and I appreciate both the NZ and Aus versions of pies done well equally. There are many different ways to make a pie, from the casing to the filling and Australian and New Zealand bakers are constantly coming up with new variations. My current favourite is Beefys in Queensland but I’m always ready to try a new one. 😊👍
As an Aussie, I can say that is NOT an authentic Australian Meat Pie! That is his modified version! Disappointed that he should have said it was his take on the Aussie Meat Pie!
Standard pie is mince - salt & pepper - gravy in shortcrust pastry, you can add pretty much any additional ingredients that you like, some popular ones are steak & kidney, pepper steak, cheese & bacon, mushrooms, curry, potato pies....... Really anything you like. I think some of these comments are a bit rough, don't forget that in USA pie is usually a desert or vegetable (pumpkin-sweet potato etc) so a Meat pie is something that is "Aussie"
Curtis what's happened. Aussie pie is nothing like that. It's beef mince and onion only in a gravy. You have made it gourmet which is nothing wrong but don't call it Aussie.
True Australian meat pies add the tomato sauce (ketchup) on top of the pie, not into the actual meat mixture. The best meat pie are found in the local, small Australian bakeries.
Mav F I know they do, I am generalising and just saying that most Aussies add it to their pie, pastry or sausage roll, or squirted through the pastry into the filling. Not everyone likes sauce cooked in the pie itself and most recipes I’ve read on the subject are sauce less. Bakeries always ask whether you have a sauce preference. My comment was intended to be light-hearted about this famous Aussie icon, of course there are always exceptions to where and when you like your sauce. Some people don’t like it at all.
Hi I am talking about when you are cooking the pie meat in the saucepan, its for flavour and balance the bitter and sweetness, I use to own the pie cart in Adelaide and the mixture has about 1 teaspoon of tomato paste per pie. On top of the pie that is different. A lot of people like it without tomato sauce on top or added inside when served or eaten.

Gotta agree this is not Aussie Meats Pies. Why add ingredients that are in an original Aussie Meat Pie. Simple Aussie Meat Pies are basically onion, mince and gravy.
This pie bears no relationship to a genuine Aussie meat pie from the local pie shop . Next time you're in Australia , Curtis , visit the Robertson Pie Shop , on the Illawarra Highway , for a REAL Aussie meat pie .
What a load of Bull!! He said certain things are optional. His recipe is is almost authentic Aussie Pie. Its his version and frankly today there is no traditional aussie pies because they have come along way from lard to butter to mutton to lamb etc and added spices.
the only reason why it is an 'australian' meat pie is that american consumers don't have the same ingredients, som of my grandfathers friends tried introducing genuine aussie meat pies into america, but the meat is all wrong and you cannot get the right pastry. the only good pies are routleys or fourntwenty
The Bige omg fourntwenty are soooo good I’m American and totally got addicted to meat pies and sausage rolls and Aussie sausage sizzle. those were my fav Aussie food and I haven’t found any pie crust quiet like it here. it seems to be closer to fillo dough. I wish I knew what spices they used to make the actual sausages. There is a place in Marietta Georgia called Australian bakery cafe and they are aussies making Aussie food. Their meat pies and sausage rolls taste like one from Australia.
I understand USA ground beef is very poor quality and contains stuff we would not consider as beef, and with thickeners and colouring agents not used in Australia. You would probably have to pay a lot for really good ground beef , aka mince. or buy steak and mince it yourself. Then you could probably get a closer match to the filling. Pastry I do not know, but again you could make your own if their frozen product is not the same, You could make all shortcrust and skip the puff pastry for the lids. I love Four and Twenty but South Australia's Villi products are better than any I have ever eaten.

The most over rated Aussie chef... His meals are more like a poor home cook... Chef seems such a stretch for this guy that has a great manager and publicist.
