Cory? I think you got away lightly fitting those lights. If your van has a canbus fitted, which most do, it can trigger failure light on dash..as it doesn't recognise the extra lights.. did on mine anyhows, I had to fit a relay to get past it. 😀
Be careful wiring lights and accessories to the vehicle loom. many vehicles interior lighting circuits are on the canbus network and controlled by the BCM / ECU computer, even If you swapout the bulb in the back of the van with an LED festoon / wedge bulb it will need to be CAN error free type which talk to the system. If you have a 12v outlet in the back use that instead
On the point about thieves taking equipment from vans. A van used to store tools, test kits, supplies, etc. should be at least up to the relevant Thatcham categories with physical deterrents like a tool vault fixed to the vehicle.
Ours (South Africa) is also flat unless you want the foil shielded one which is round (we call that Surfix or Norsk). Used anywhere the cable is exposed and someone can damage it (e.g. surface mounted) as the foil earth is protection against electrocution. Can also be buried in the ground. I like to use it for lightning protection too. The foil (like shielded LAN cable) forms a Faraday cage and stops surges induced in the cable. Well it seems to work for me anyway.

That 0.5 mm is probably okay for the LED lights with DC you have to worry about voltage drop and current draw probably nowhere near an issue. I do say if you're going to do this try to interface with the remaining connector that way you have reversibility it's always nice to have that undo button as somebody who lived through the decades where undo was sometimes only one reversal. I would love to get an auto electricians take on tapping off the interior lighting circuit with amppaucity etc. Probably nothing to worry about if the interior lighting is incandescent. With each lighting run being its own run you're not pushing all of that current on one cable in a cascaded fashion so the wire size shouldn't be any issue. In some newer vehicles that are a little bit smart and dumb about the lights and thay can have a minimum load requirement which if not met that can causes the LEDs to flicker or not go off or not dim properly.
You may need to check that the LED strips actually go completely off. I learned a few years back When I worked for a company who made and designed the type of racking you are using. That the led strips would illuminate when the central locking was on as they received a back feed from the neutral. A non return diode sorts this issue out perfectly
