I know It's not conventionally written as such but I believe that in peel, it's a diphthong, is there a good reason not to transcribe it as such?

That's a very accurate point, actually. In my videos, however, I am trying to add different layers of 'narrowness' in different steps. So, I didn't deal with that in this video, but will hopefully do so later.
