I think lamb can handle being more medium vs med rare, generally so I think you did great! I love that you go back and retry your difficult or “missed” attempts rather than just saying “ah, that’s not the recipe for me” or “good try” or whatever. I think the dish looked amazing!
It gets really dry, I try and try to cook it to perfection but timing is so hard to get on lamb. I'm gonna try again but it's so expensive I get mad when I mess it up

I have a recommendation for you Lisa! I have this cooking thermometer (mine is from the brand Taylor) which has a really long wire end that allows you to keep the thermometer inside the meat the entire time it cooks. The wire is also super thin so it allows you to keep your oven closed, which means you don't have to worry about losing any heat from the oven. It also has pre set times for different types of meat, but you can set a specific temperature as well! And the second the meat reaches the set temperature, it will start beeping loudly so you'll always notice when your food is done! I always used to be super worried about over or under cooking meat, but now it's a lot easier and less stressful I hope this helps ❤️
I also have such thermometer but use it mostly to check oven temperature to make sure it's right. Here we just check if meat is cooked not if it is rare etc but I would love to cook it that way.
Once you get the feel for cooking meat, you'd be able to probe less. The holes allow the myoglobin to seep through, and it doesn't look appealing with the green crust. The holes also expose the meat and may cause overcooking. Anyway, looks amazing as usual! Your growth as a cook has been insane.
Didn’t looked that overcooked at all. Still was juicy and pink. Sauce could be a bit thicker for my taste, but it must taste amazing. Probably works well with the lamb.
Constantly poking meat can cause the juices to spill out drying the meat I recommend the meat thermometers that come with a long cord. You can keep one end in the meat as it cooks in the oven, frier, pan, etc. while monitoring it's temperature with the other. Take the thermometer out only after you've let the meat sit and allowed its juices to settle.
Hehehe when i watched the preview the other day i thought you rolled it in matcha, breadcrumbs and herbs makes way more sense lol Also i think its really nice that youre showing us your learning process and your mistakes because a lot of people doing cooking videos seem to know Everything. The best indomi combination is one orange ( special chicken curry ) and one yellow ( chicken curry ) but not the yellow that u used here. Trust me that combo is the BEST

Lisa the noodle you ate are actually not suppose to be dry, I eat these but I gotta tell you, you have to make it a bit soupy! It’s delicious with the soup believe me!
