I always appreciate when you mention the F and the C. My husband is American and I am Austrian. We live in Austria mostly. I'm often trying to find ways of supplementing something that I can 't find over here. I really appreciate that you often point out what to do if you don't have a certain ingredient that you can only find in the US. THanks!!!

Hey, Gemma! I am trying this recipe out right now, but I do have a suggestion for the recipe online for any new bold bakers out there. I would suggest specifying that if they’re going to warm the chocolate up in the microwave that they should do it for 20 seconds at a time. New people may not know about the concerns of heating chocolate in the microwave for 2 to 3 minutes lol Thanks for sharing this recipe!

Hi. Thank you for sharing. I do tell bakers to cook brownies in a microwave at 20-second intervals as we don’t really cook under the same conditions, especially with microwave ovens. I’m glad you share the same here, too.

I can’t wait to try this! What brand of chocolate do you buy? I have not been able to find 72% anywhere that I have been shopping. My husband and I both enjoy your videos. Too bad we have both gained weight since I have tried several recipes.😁

Oh no! Hope you enjoyed gaining them. You can use anything above 60%, it will be grand. I use different brands, Ghirardelli, Callebaut, etc.

I was just catching up on your last four videos and thinking.... what if Gemma delivers a series called " BBB around the world "? Where you can feature a signature dish from every country which has followed you all these years, Chile included of course 😀, my country. There's much more than American, english or French dishes. Hi Gemma, I’m a big fan of yours and if I want a recipe I always check your website first. Thank you for this wonderful decadent recipe. However I was wondering if I could cut down on the amount of sugar for the brownies?

Thank you so much for your support! Cutting back further than 1/4 is not recommended. While cutting back sugar, note to adjust eggs or other liquids to hold everything together well and get the same consistency with the recipe. Also, keep the white sugar and brown sugar ROUGHLY at the ratio AROUND 1:1 to 1:3. Besides brown sugar which creates the caramel aroma, mixing in some white sugar which has less moisture to get caramelized faster will give you the crackly top. Hope this is of help!

Hi Gemma! A few months ago I made some jars of salted caramel. The jars were first sterilized, then filled with hot caramel and placed in a pot with boiling water for a few minutes. Then I let them cool and put them in the pantry after making sure they were vacuum packed. I haven't opened it yet. In your experience, is this method I followed correct for keeping caramel out of the fridge for longer? It was the first time I tried and I still haven't had a chance to open a jar. I saw your brownie recipe and would like to try making them, using this salted caramel of mine that I put in a jar months ago. Thanks for your recipe and your availability

Hi Letizia. I haven’t tried canning caramel, as I usually make only a small amount at a time. In principle, those should still be good with the method you used.
