➡️ Ingredients to make carbonara (4 people):
- 400gr. bronze-drawn pasta
- 9 egg yolks. Alternative 2 whole eggs and 5 yolks (if you use whole eggs you must be careful about the temperature during the bain-marie. Never exceed 62 degrees. I recommend using a kitchen thermometer)
- 200gr. pecorino romano cheese, medium seasoning
- 90gr. parmesan cheese (seasoning to taste)
- 300/400gr. of seasoned guanciale (best if it has a pepper seasoning)
- freshly ground black pepper (according to your taste)
- coarse salt for the pasta cooking water q.b.
- fine salt to go with the cream cheese and egg mixture (do not overdo the salt as the preparation will be very savory in itself)
