I like to salt brine my beans and when I’m ready to fix them, I rinse them really well and they still taste fresh and have a good amount of crunch left in them. I also like that I can keep adding them in the crock with a layer of salt as I harvest. It’s worth trying a batch.

I dehydrate green beans frequently. Last year I had a lot of Rattlesnake beans that we did not like fresh, but when I chopped them about 1/2 inch long and dehydrated them along with other chopped vegetables, they made really good soup vegetables. This is also a good solution for green beans or many other vegetables when you only have a small batch and more are not coming soon.

I'm glad I just watched your video. I have a whole sink full of beans. I wasn't going to blanch them but just dehydrate them. So now I know better and I will make sure to time it right.

You can't really over-dehydrate something. For long-term storage, you'll want things super crispy dry anyway. I highly suggest watching The Purposeful Pantry's YT channel if you haven't discovered her yet. She is a wealth of information on dehydrating and has a ton of tutorials on dehydrating just about everything. I made my own green powder because of her tutorials and it was life changing! I also love being able to dehydrate all my peppers, turning them into powders, and making my own chili powder blends. Dehydrating can open up a whole other world of food preservation. Good luck!

A fully dried vegetable is never ruined. Put it in your Vitamix and turn it into a powder. You can use it for vegetable soups, added to smoothies, etc. The powders can last - shelf stable.

Soak the dehydrated beans, they will reconstitute fine. Or if you do smoothies, grind the dried beans to add to your shakes. That's what dehydrated green beans look like :)

I blanch and freeze mine as they come in, and mid summer when I am running out of freezer space, I take all the green beans out, thaw them and dehydrate them at that point. Makes more freezer space and I’m not constantly in a battle for the dehydrator.

I was watching Whipperwheel Holler earlier today and Mrs Lori made leather britches. I’ve never heard of that but I’m going to give it a try. She strung the green beans with a needle and thread and hung them to dry. Apparently that’s how they dehydrated before equipment was available. She showed how to cook them from dehydrated and the end results looked so good.

Freeze dried is good for a snack or can be ground in a blender for smoothies. If you have a person in your house that likes chips this is a good alternative.

Toss in oil and salt and freeze dry them. It's a crunchy snack.

The first time I had home canned garden green beans it blew my mind because it was so different from green beans in a can‼️ I'm sure yours will be great no matter how you preserve them.

Jill why not use your Harvest Wright dehydrator. You can do the same thing except using the dehydrator. Then place in your bags or canning jars. Use them in soups or anything else that has a liquid. I know this works for Living Tradition and Acre Homestead. Just an idea. Glad to see you feeling so much better.

Don't toss them. Save them for soups. Dehydrated greenbeans shrivel up. They remove all moisture and shrivel unlike the freeze dryer. You won't be able to snack on them but they are dried until you re add moisture and then use them or just pop in soups.

Ahhh, you reminded me I have okra in my dehydrator that I put in yesterday. I LOVE dehydrated okra. You can rehydrate it and fry it, add to soups and stews, flavor with seasonings for a snack, so many options.

I’ve red all the comments, I think, and didn’t see anyone mention canning and eating green beans...the old fashioned way? They are just like off the vine if done correctly. I could never think of dehydration or other ways for doing green beans, except cooking a batch to go with a meal. They are delicious! To each his own and I’m old now, so that could be the big difference! LOL!

So a little fyi. Dehydrating foods can cause them to loose vitamins A and C. Depending on the method dehydrating may also cause loss of B vitamins and some minerals. Thought I’d mention that. I’ve read this for years. Glad your feeling better

I highly recommend "The Ultimate Dehydrator Cookbook" by Tammy Gangloff, Steven Gangloff and September Ferguson. It's pretty much the "bible" for dehydrating ... you'll love it!

I dehydrated 2 big bags of frozen Veggies and filled an old big myo jar. I will just sprinkle it in soups or stews. Just a little extra vitamins hear and there.

you could grind them into a powder...add to some cream cheese with other dehydrated veggie...make a veggie spread..who knows might be good?

You can dehydrate both at the same time BUT you have to set the timer for the one needing the LEAST amount of time not the one with the most amount of time! 🤣🤣 I was thinking that when you put them in but I thought no maybe she'll remember! Spoken from experience.

Best way to eat green beans is lightly floured and put in oven or Air Fryer...crispy and soooo good! No blanching needed.

You could have tested rehydrating them as if they were leather britches. Check Patera at Appalachia's Homestead.

Couldn't tell....why do you think they burned. Did you taste them? Maybe they just look like that dehydrated? Interesting how taste buds differ. For me nothing better than home grown fresh then home canned green beans. You're more patient than I am laying them out. I pour what I'm dehydrating and hand smooth on the trays. I admire your testing out and trying multiple methods. Helpful when harvest or time are issues. And some processes might be more for soups, other for grilling \ frying. Etc. Love walking along your days with you. Thank you for sharing. You do look quite upbeat these days. Hope all the doctor need continued to be good. 💚💛😎

If you want whole okra, cut a slit long ways down the center. Otherwise cut into small pieces and dehydrate for 6-8 hours on 125°
