Dehydrating is an excellent way to preserve your harvest, make healthy snacks, and have fruit and vegetables available in the winter.
I love to have dehydrated green beans on hand to put into my soups, stews, and casseroles.
Dehydrating frozen green beans is so easy to do, because you can skip the blanching process as the manufacturer has already done that for us! I personally do not bother defrosting or thawing out my beans. I buy it at the grocery store, and come straight home and put it onto my dehydrator trays using the mesh sheets. Put cover on. Set temperature to 130 degrees Farenheit. Dehydrate for 10-12 hours. Check the grean beans to make sure they are completely dry. You’re better off drying for longer than the minimum hours, rather than not having the beans done completely. If they’re not dried completely, when you store your item, you’ll have spoilage.
Once they've dried, let them sit for 30 min before you put them into your storage container. They are still warm from being in the dehydrator, and thus you’ll get moisture in your container, and again, you’ll have spoilage. Once they're cooled, you can start gathering them for your container.
For short term storage, I use plastic bags. For long term storage, I use glass jars with food grade oxygen absorbers.
Don’t forget to date your containers so that you can rotate your food!
I am using a 9-Tray Excalibur Dehydrator with a Timer.

I love my dehydrator and use it for all types of fruits and veggies. If at all possible, get one with a timer, as it makes a big difference in getting the best results without overdrying your food.

Very simple instructions. Thank you. I'm in the process of clearing my freezers out to dehydrate as much as possible. I messed up as I was putting my peas/carrots in. I didn't let them cool and thankfully I watched your video lol so I got them right back out & stuck them back in the dehydrator because I didn't let them cool the 1st time lol 😆now I know. Thank you so much!!

On the peas and beans you dont need to leave head space? Or is that pressure and water bath canning only??

Should only fill air tight jar 2/3 full and shake every day for 5 to 7 days to ensure there is NO moisture …….this is conditioning. If completely dry after that time then top up a bit …not packed full…add desiccant if you use them, seal and store. Should “condition everything you dehydrate. Hope this helps 😁
