Hamilton Beach 5 Tray Dehydrator
Erin's breakfast bars recipe: 1 cup oats, 1 cup shredded coconut, 1/3 cup chocolate chips, 1/2 cup peanut butter, 1/3 cup honey. Mix, spread in a pan, and let it harden. No baking needed.
I don't have dehydrator-specific recipes for my veggie chili, curry, burrito mixes. I just google it and pick ones that have ingredients that I like or that I want to use up. Dehydrating is a great way to save produce that's going to go bad.
******DEHYDRATOR & MEAL LIST******
125 degrees
Canned beans - rinse first, 125 for 6-8 hours
Mushrooms - 1/8" slices, 125 for 6-8 hours
Peppers - cut into 1/2" pieces, skin side down, 125 for 6-8 hours
Chili - see instructions for ground beef before preparing, refrigerate overnight to enhance flavour, 125 for 8-10 hours, combine one to one with water to rehydrate
Spinach - can double up in two layers, 125 for 4 hours, may start blowing around
135 degrees
Cherry tomatoes - cut into quarters, 135 for 8-10 hours, ensure inside is dry
Onion - dice to 1/2" pieces, 145 for 2 hours, then 135 for 6-8 more hours, should be pliable
Bananas - 1/8" slices, 135 for 8-12 hours, until chip-like or leathery
Pineapple - 1/8" slices, 135 for 12-18 hours, until pliable, smaller chunks dry faster, trays fit two pineapples
Pasta sauce - blend if chunky, avoid cheesy sauces, 135 for 6-8 hours
Blueberries - must break the skin first, 135 for 12-20 hours
Watermelon - thin slices, 135 for 18-24 hours
145 degrees
Ground beef - extra lean (max 15% fat), add 1/2 cup bread crumbs for each lb of beef before pan frying and work it in with fingers, rinse with boiling water after pan frying, 145 for 6 hours, will be hard ("gravel")
Canned chicken - canned is pressure cooked, drain and rinse under hot water, break into small chunks, 145 for 8 hours

For a snack: I dehydrate hummus then spin it in the food processor to make a fine powder. At camp, mix a bit with warm water and in about 5 minutes you have delicious hummus. It is a great simple snack.

Also, outside of Canada and USA, eggs are often kept at room temperature so I think they are fairly safe to bring especially for the first few days. Thanks for doing this series Jon. I know you don’t like doin these kinds of videos, but they really are helpful for so many. Sometimes you just point out one little thing that we never thought of that makes things so much easier! Also, I use Kevin outdoors recipes and they are phenomenal! When I dehydrate, I dump all the trays out into a large flexible cutting matt. Then you can fold it in half and dump it into a bag or container or even weigh it if you are following Kevin’s recipes to a tee! 😂😉. Thanks for all you are doing! It is MUCH appreciated! Each one of your what’s in my pack vids were helpful!

I see someone already suggested canned pineapple for dehydrating. I started doing them when I was dehydrating apples and needed an acidic soak for the apples. I’d heard that pineapple juice worked well for this and was then left with a few cans of drained pineapple rings. I figured I’d chop them up and dry at the same time. I was surprised by how well they turned out. Chewy, sweet goodness is always welcome while chilling in a hammock in the back country. (This has reminded me I need to get going on my dehydrating stash of food!)

For more veggies, I found a few older articles about dehydrating raw veggie salads in Backpacker & Backpacking Light (online) magazines. They are kind of like a "coleslaw with vinaigrette" salad. Start cold soaking them at lunch, and they are ready by supper. Obviously not exactly like fresh salads, but can be cool & refreshing with a bit of veggie crunch.

They are great for a kick of nutrition and flavour and they are light as a feather to carry. They are available at health food stores and on line. I love these even at home. Minimal packaging. I own all of the backpacking chef books and love them. The action plan was an amazing experience to follow and have so many meals prepped. It was fool proof. I can definitely vouch for those products. I’m going to look in to kevin’s book. I’ve followed him for years but didn’t know he released a dehydrating book. Ps for meat you don’t need to pour water over it. Follow the backcountry chefs guide to it. It turns out nice. Also you need to look in to a vacuum sealer. It really helps with space, as well as long term storage, plus you can even use certain brands of bags to reheat in and not need bowls/plates.

Ham and bean soup dehydrates really well and re-hydrates back to deliciousness easily and has lots of what you need to keep going. You can also make it without the ham and use vegetable stock - I sent some to my niece who was walking the pacific trail. She liked it but it took too much of her stove fuel to re-hydrate - you would not have that problem since you are using the wood fire.

I am a year into dehydrating my own backcountry food, and agree with you on dehydrating burger and chicken. The biggest game changer for me was learning how to consistently make good jerky. It’s cheaper than the store bought and has so much less crap. I use thin sliced venison and simple ingredients like salt and pepper and will add some maple syrup and cayenne to some batches. I prefer to eat low carb during the day so it fits the bill for me. Thanks for the videos, I looks forward to seeing your summer trips!

This was really interesting and those packaged meals from MEC or Sail are crazy expensive so I went the same route as you did and bought a dehydrator. I bought the most common one on Amazon and it's round and the trays and liners were easy to order. I also bought a food vacuum sealer a long time ago and use it now to package my meals and I can rehydrate right in them and it works great if you make a cozy. Funny thing, while I was watching you video I had 4 trays of fruit sheets I am making for a trip a the end of this month and of course you have to use the solid tray liner and it takes a long time. You had talked about air flow and I thought why am I still using the tray liner once it is solid enough and took it off as a solid sheet to finish on the grates so thanks. I do have a question for you. I have always gone the route of creating the whole meal like your veg curry and then dehydrating the whole thing, but I noticed you are doing things like pasta sauce and veg on it's own. Are you building the meal in the backcountry with the various separate dehydrated goods? The only thing I do like that is I dehydrate fruit on it's own to then mix with my instant oatmeal since it kicks it up a notch and makes it taste way better. Keep up the great videos and thanks for making them.

Good video! I have been vegan for 10 years so dehydrating vegan meats is easy bc most of just beans or chickpeas. I love doing bananas and apples. I need to do pineapples you say you love them. I have an Excalibur dehydrator oh I don’t like tomatoes but dehydrated ones are so good haha

This was super helpful because I just picked one of these up at a thrift shop for $8, but it has no manual

Growing up my parents used to take "chip beef" (freeze dried ground beef) into Algonquin for a week trip we used to go on every summer. Inevitably red squirrels would get into the hanging food pack and the chip beef was their favourite. It was $90/pound in the 70's and surprisingly it's about the same on Amazon right now. I'm making a batch of beef jerky right now because I like a thicker cut and don't want the MSG and other chemicals. Looks like you have a good system.👍

Hahah had no idea red squirrels were so carnivorous

@@LostLakes discovered last year up at my remote cabin that they eat mice too! The mice were out of control last year and as I caught them the red squirrels would pick them up. Oh, and we had no blueberries in NE Ontario (Kirkland Lake area) either. Worst I've seen, and no raspberries or wild strawberries either.

Amazing! Thanks for sharing! How do you portion control properly?
@LostLakes
@LostLakes 3 года назад
Thanks edelight! I'm far from scientific about it usually. Except on our 2-week Quetico trip last year, because we really had to. I carefully measured food into the containers and then portioned it for each meal with a measuring cup. Typically about 2c of dehydrated food per meal for me (less for Erin)

Thank you for the video. I have not begun to dehydrate my own meals but I intend to soon. Those backcountry meals you can buy are so expensive the more I get out. As for eggs, I visit my local Mennonite farms and ask them if they can pick me some farm fresh eggs right from the coop. At this point now they know who I am and understand why I ask for non refrigerated eggs.

Thanks Myth, I'm curious, what's your preference for non-refrigerated? I know in some other countries they don't refrigerate them in stores
@MythicalMonk3y
@MythicalMonk3y 3 года назад
@@LostLakes I take non refrigerated eggs when it is warmer outside (but not too hot out). Once you refrigerate an egg, you only have an hour or two before you need to use it. If you can get a local farm that sells eggs to get you some right from the coop you're good to keep them outside for a long time without worry about bacteria growth.

Great video! Thank you for the tips. I’m preparing dehydrated foods for a 17 day trip coming up. Do you get condensation when you remove the bags from the freezer?
@LostLakes
@LostLakes 3 года назад
Thanks WRT! Interesting Q, I had to think about it. But I'm pretty certain I don't on the inside of the containers....if dehydrated properly, there should be virtually no water inside to condense when the temp changes. Condensation is hopefully only on the outside of the bag at that point

Have you ever considered dehydrating frozen onions to reduce the prep work of slicing and dicing? Also a variety of frozen vegs to use in stews? Enjoy your content. Great Tips for sure. Thanks for sharing your videos with us.

Thanks! You mean like the bags of frozen veggies that are already processed? That's a good idea...no one like prepping veggies

@@LostLakes Yes the frozen onions that are diced and frozen. Sometimes get them in bags larger than 1 pound fairly cheap and they do put them on Sale.
