On the chicken scampi sauce. A possible reason for splitting up how stuff goes into the pot is to help it emulsify easier and make a smooth cohesive sauce rather than is separating with the fat floating on the top.

You can buy mojo in a lot of stores or on line and it's essentially the marinade you made! I'm sure yours was better with the fresh ingredients but for a super quick meal, you can just throw a roast with a bottle of mojo in.

As you were making your cuban pork, I was sure you were making the receipe I've used and loved. The only difference is mine calls for a bottle of real sugar coke. BTW, I use the meat the first night for pork tacos and make sandwiches the second night. Such a great recipe! Snow is expected this weekend in the north east so I should pull a pork butt out of the freezer. Thank you for sharing all your meals - inspires me to enjoy cooking again.
