Delicious Holiday Prime Rib Roast

In this video, I am preparing a delicious Garlic and Herb Crusted Prime Rib roast, the perfect christmas dinner. I go through the entire process, start to finish on how to prepare it to a perfect medium rare. I also give recipes for a simple and delicious Au Jus Sauce, and a creamy Horseradish Sauce.

Ingredients in the Au Jus Sauce:
1 oz. Onion
1/2 oz. Carrot
1/2 oz. Celery
1 Tsp. Tomato Paste
4 or 5 Whole Peppercorns
2 Cups Water
Beef Base
Thyme
1 Bay Leaf
Salt to taste
Ingredients in the Horseradish Cream Sauce:
4 oz. Sour Cream
2 oz. Heavy Cream
1-2 Tbsp. Horseradish
6 g Shallots
3 g Garlic
Zest of 1/2 Lemon
Thinly Sliced Chives
Salt to taste
Ingredients in the Garlic Herb Butter:
3 Tbsp Butter softened
1-2 minced Garlic Cloves
2 g finely chopped Parsley
1 g Thyme leaves chopped
1 g Chopped Rosemary
pinch of salt

But is is hot when serving after resting for so long? Other methods say rest first, then reverse sear, which reheats.

you could go that route as well. but the internal portion of the roast is actually continuing to heat up from the exterior heat conducting heat to the inside. Thus the term "carryover cooking" meaning that it is still cooking. Both methods will work, but remember that right when it comes out from the oven it is too hot to immediately bite into, so you will still need to let it cool slightly regardless. by the way, I greatly appreciate the feedback and follow up questions

@foodandcooking101 thank you for the quick reply. This year I did the rest then reverse search as I had to wait 2 hours for the guests.... and it was perfection. Heated to 122° then rested. 450 oven for 10 minutes after a 2 hr rest, tented with foil, served immediately. Next year I will definitely try your method. I understand carryover cooking, just unsure how long it lasts. I like numbers when I learn, so that I can learn the feel....

I guess each scenario is going to have its own best option. if you have to wait on people, clearly that would be the best choice there. Shit, if you really want to make good flavor at the end, fire up the grill and sear it that way
