This is a great substitute for mashed potatoes. If you haven't tried a parsnips before do yourself a favor and make this recipe. They are sweet and delicious!
4 medium sized parsnips & other root vegetables peeled and cut into uniform pieces
2 tablespoons unsalted butter
8oz heavy cream
4oz water
Salt and white pepper
Chives and brown butter
-Feel free and add a mix of root vegetables. Celery root, rutabaga, turnip all work great
-Cut the vegetables in small uniform pieces to ensure even cooking
-Sweating low and slow adds a nice layer of complexity, don't skip this step
-Add garlic, shallots, brown sugar, maple syrup, cayenne or any other flavor you like!
