Great looking pastrami pork - I have 2 tri tips, rack of short ribs and a brisket point in a cure - going on 12 days - going to soak them in water tonight and smoke em tomorrow for pastrami as well - will need to try a pork brisket in the near future!

Well that looks incredible and I have to admit I've never seen pork pastrami. I have done many pastrami's over the years still pretty much using your video from 3 years ago where you started with some corned beef and then soaked it overnight to desalinate it. I'm assuming there was no fresh water soaking to get rid of some of the curing salt? Definitely looks like a must do. All the best Larry. Cheers!

No desalinating because it wasn’t corned when purchased. Definitely worth a try if you can get your hands on some! Cheers!
