Ingredients:
• Olive oil
• 1 red onion, diced
• 4 garlic cloves, minced
• 1 tsp salt
• 1 tsp pepper
• 1 tsp chili flakes
• 1 can of chopped tomatoes
• 1 cup of tomato passata
• 3 cans of Cannellini beans, rinsed and drained
• Parsley and cherry tomatoes for garnish
🍽️ Instructions:
1. Sauté the Aromatics:
Heat a splash of olive oil in a large skillet over medium heat. Add the diced red onion and minced garlic to the skillet. Season with 1 tsp salt, 1 tsp pepper, and 1 tsp chili flakes. Sauté until the onions are soft and fragrant, about 5-7 minutes.
2. Prepare the Tomato Base:
Add the can of chopped tomatoes and the cup of tomato passata to the skillet. Stir well to combine and bring to a simmer.
3. Add the Beans:
Add the rinsed and drained Cannellini beans to the skillet. Stir to ensure the beans are evenly coated with the tomato mixture. Simmer for 15-20 minutes, allowing the flavors to meld together.
4. Garnish and Serve:
