Hello Gemma! This video reminded me of some lovely childhood memories. There was a time when after my father had gone, money was tight. My mother used her special gifts of being able to make everything beautiful with just a bit of money. She was like that in the kitchen too. Well, even before my father left she was the family Trailblazer in the kitchen because she tried recipes from magazines and actually used garlic and not just onions, gasp! LOL Sometimes we could only afford eggs. She used to make us quiche! We felt So Posh LOL. At that time not many people had quiche in their home. I am so happy because I think I will surprise her with a quiche. This one will have a crust as we could not always have the crust. As an added bonus I am so excited because I recently purchased some chickpea flour to try and expand baking with different flours😊. Thank you dear Gemma ❤ Loved the wonderful tip about the lentils. I didn't know that you could save lentils or beans that you used for blind baking ( using proper baking terms 😁) to use again. ❤💚❤

Who doesn't love a recipe with bacon in it? I know I do! I can eat eggs, so this would be no problem for me, the more bacon the better. I have a question, but I hope I don't get a talking to for this, if you can't make a crust from scratch, can you use store-bought?

Yes chicken and mushrooms will make a lovely quiche! There are so many different things you can add to your custard base. I make one with hamburger, onions and cheese that is wonderful. :) Quiche is actually really simple to make, just make sure you don't over bake it and you're good to go!

Since today's May 30th, Joan of Arc Day (she's been a heroine of mine since I was little), I made this for dinner tonight and it was AMAZING! The flavor of the filling was wonderful and the eggs were perfectly set. Just spectacular. Will definitely be making this again, and adding it to my list of "Recipes I could bring to brunch". As a Frenchie I just love to eat and make quiche. What is great about this dish is that you can put anything inside ! I personally love to replace bacon with tuna and curry powder, or cherry tomatoes and ham... Always delicious 😍

I'm allergic to eggs, so I use alot of your recipes. As for quiche, I normally use store bought puff pastry as a base (I have to try my recipe for pie pastry), and for the filling I use heavy cream, cornstarch (to thicken the sauce) and a yellow food colorant (just to give that egg look) and add everything that I want, or have. I first bake the puff pastry alone with beans for weight and then put the filling and bake it, first normal, then on the grill. It doesn't take like a normal quiche, but for me does a good job. Love from Portugal.

Hello Gemma, I just found your channel a few months ago when I was trying to find a recipe for blueberry muffins, and ever since then I have followed your channel. I have two questions about the quiche. I have made this quiche two times and both times the custard seems underdone no matter how long I keep it in the oven. It doesn't seem to firm up. What could I be doing wrong? My second question is about the dough. I combined it into a ball and then put it into the fridge to chill like you instructed. When I took it out of the fridge and placed my rolling pin on it, it broke in two and was kind of crumbly. Did it need more liquid? Adding the right amount of liquid is difficult. I hope you see this and can help me. I would like to try to make it again, but I'm afraid of getting the same result.

Have you checked your oven temperature? Have you baked something else in it to test? If it doesn't firm up, then it is about your oven temperature. If you can invest in an oven thermometer, that would be grand. Ovens are finicky. Sometimes they don't tell us the actual temperature! This happens in professional kitchens too. On the dough, if it was crumbly, then it means it was dry. It needed more liquid. Adding the right amount liquid will depend on other conditions like the room temperature and humidity. If you live and bake in somewhere more humid, you may need a little less liquid. But if it is dry where you are, you will need to add in a little more. So don't be afraid to add in a little at a time until your dough turns well hydrated. Your hands with the feel of the dough will tell you when it is ready. No fear! It is about learning. Practice makes better!

I'm not sure about the oven temp, but I do know that the stove top gets extremely hot and I have to be careful with the dials so its possible that the oven has the same problem. I thought it wasn't firming up because I used too much heavy cream. I could feel the difference between this last dough I did and the first one. The first one turned out well and rolled out without any problems. I think I was just afraid of adding too much liquid and not being able to fix it. I will try again because I really want some of that classic quiche, but I would like to make it myself instead of buy it. Thanks again for the reply!!

Hi Gemma, if I have only 1/2 cup of cream, what can I replace the other 1/2 with,(also, I do not have any yogurt or nut milk available 🙁 ), may I use 1 cup of milk and 1/2 cup cream?

That will work, I suppose. It might need more time to bake as milk is thinner than cream.

Hi Gemma, Your Quiche Lorraine looks so beautiful!! I used to go to the Anderson's just to buy Quiche. LoL. I'm going to try your recipe next week. A few months ago I had a carton of eggs. I had onion, bell pepper, bacon, mushrooms and cheese in it. It was too much to eat. I had to freeze it for breakfast and dinner certain days. Lol

Oh Gemma!! I'm gobsmacked! I followed the recipe to the 'T' and wow! it came out perfect..I though did not crimp the edges..the family,their tummies did not know the difference.. and all gone now!! within the hour! I substituted the rashers for turkey rashers and sprinkled paprika into the filling! I still cannot believe it came out so well! Your recipes are easy to follow too! go raibh maith agat dear Gemma..from us here in Co Laois ( Ireland)

The consistency is similar, but it does taste a little different. It's about as close as you can get to the real thing, though!

Hi Nouyi! This is most likely because you worked in a warmer climate. You should work fast with the crust. As your crust turned oily, the easy fix is to place it in the fridge for a while. Once chilled, all will be well. Gemma 😊

OMG! Gem-ma! You have done it again! I love Quiche, especially onion, so I am making this for tomorrow's dinner! I will add turkey kolbassa and turkey bacon, onion(of course), a bit of finely minced thai chilli peppers, sweet pepper and sun dried tomato! I get a bit stressed when it comes to the pastry, but you make it look so easy and do-able, that I feel confident that it will be stress free! It looks flaky and I can see myself using this pastry for many other recipes, THANK YOU! You are the Real Bomb!!(my kids words! )

Looks delicious! However, i always thought that there was not any cheese in a quiche lorraine, what do you think? It's just a quiche then, but still yummy looking 😉

Hi there! Most Quiche Lorraine recipes have cheese. I've seen them with everything from gruyere to swiss!

Hi Gemma It's absolutely great what you've made but could you try coming up with a healthier version of a quiche as then people on a diet wouldn't need to restrict themselves from eating quiche

Feel free to play with substitutes! Instead of a load of cheese, try vegan options. The cream is necessary, but you can go with a lighter version. Instead of bacon, try turkey bacon, or skip it for more veggies altogether! There are ways to make it "healthier" -- but as I always say, everything in moderation :).

Hi, if I use lentils for blind baking, once they cool down, are they not usable cook normal lentils (dal) to be eaten with rice?

Ohhh Gemma! Ive been searching for a recipe for YEARS..NO JOKE! I had one everyone loved lost the recipe with brain injury~ better now but no recipe 🤔 mine was a quiche could change up so many ways. I do have a question for you... I love a more egg based naturally that's the diff between the two recipes (I believe..lol) so can I make this with more filling? & Do You have A quiche recipe to share? I miss it greatly. I need proteins (again with the health issue. Part of same one .. however I can't cook an egg stove top &eat it. Weird I know I used to cook for a multitudes of people just about daily(sure miss it.. they all have moved on grown up or moved so is just me and I don't cook much at all due to health plus it's no fun to cook for one when u have food left over for days haha. I can't get used to the lesser ingredients.. my brain says why? Lolol ) anyway, I don't process proteins & they are they key to certain things I deal with. One of the only protiens I can generally take in EGGS! OH I LOVE AN EGG But now my daughter has a family of her own.. she's not here to cook them for me.. silly I know who cooks eggs for everyone else then needs someone to cook theres..go ahead LAUGH. ...I DO 😂🤣😂🤣😂🤣 🏵😄 I sure APPRECIATE ALL YOU SHARE! I planned on being a bakery with a bakery at a very young age but in the middle of starting.. accidents happen. I live vicariously through you , it's so easy, your a delight .. You could try that, but I feel like the process would lose a little something. I'm just using cold butter straight from the fridge, without adding the garlic to it! If you do give a shot, you have to let me know how it goes!

Add them in -- and any other veggies you might like. The sliced chives will give you a bit of that onion-y flavor you're looking for, but add more if you want more!

Unfortunately not! The idea behind the stovetop cake revolves around the steam doing the baking, so you wouldn't get a crunch from the churros that way. Try a toaster oven if you have one!
