Currently waiting for the pickles in the waterbath and I wanted to say thanks for such a great tutorial! It made me feel like my mom/grandma was teaching me how to make them and it warmed my heart beyond words.
I love these old ratty books. Especially the ones that have multiple people adding to the books. You know that everybody came forward with their best recipes. Thanks for watching! Colleen
Great video!! Thankyou. I'm going to follow your recipe! Love old ratty books! I have my aunt's original Purity Cookbook! She died when I was 12 and I am now 70. She wrote all over the pages, making little adjustments. Very precious to me.
Hello Marie, I do to! It is an interesting old book because we I collected recipes from some of my family, collected some from recipe books and then before one of our family reunions one of my cousins asked each family for a recipe which she compiled into a small cookbook. I just added my collected recipes into the book and boy it has been used alot. I will have to use it for other recipes to share. Take care, Colleen
Hello, Thank you, I cannot make them without thinking of my Aunt Joan but its the most pleasant memory for sure. I hope you enjoy the recipe. Cheers, Colleen
@@StockingMyPantry It totally is, I know it doesn't sound very appealing but when I make this recipe, I think of her in her tiny little kitchen, with everything crammed all around her, sweat running off her in rivers and still she was one of the most beautiful women I ever knew. Wonderful memories for sure! Cheers, Colleen
Question. I see your brine is 3:1 water to vinegar. Every Ball recipe I read says equal parts vinegar to water. Is less vinegar acceptable for long term shelf storage? Thinking about that dreaded botulism. Thanks.
For long term storage I would follow the Ball recommendation. I usually make batches of 6 to 8 at a time and end up sharing them before 3 months are up. Take care, Colleen
Hello, thats fantastic news. I will go there right now and see if I can order one. And let all my Canadian friends who have been waiting for it know as well. Thanks ever so much! Colleen
Debora, Thank you, I was so excited to see this that I forgot to say thank you. I immediately went on and ordered one for a family member. They are much cheaper through wayfair at $192. than they are at amazon.ca where they are charging $383. + tax and an import fee of $81.00. I hope you are keeping well and staying safe? Take care, Colleen
Coleen you didn't top and tail the last jar and a half, left the blossom end on, first jar is good, and half of the second jar you top and tailed, but then forgot after that, oh well, these things happen. No problem, they'll taste good anyway! TFS.
Hello PJ, So great that you are watching! I get so focused I sometimes miss those details, which are all important. I will have to look the jars over and save those ones for myself. lol. Cheers, Colleen
If you’ll cut the tops and bottoms of the cloves then put them in a jar and shake them, all the paper peelings will just come off and you won’t have to stand there and peel them. I just think it’s a bit easier.
Hello Florence, You are absolutely right. I usually have things prepared ahead so people so not have to watch the tedious parts. But definitely that is the way to do a bunch all at once. Thanks for watching!
Thank you Sheila, I've decided not to bother with one since the recommendations have changed and they say we no longer need to heat our lids before hand. But thank you for the information, I appreciate you following along. Best wishes, Colleen
Hi Colleen, I'M going to attempt to make tomato and onion chutney and waterbathing. I'M TERRIFIED! wish you could magic yourself over here to me. I would feel much better about it, I can assure you. You have a very soothing demeanor about you. Wish me luck!
Hi You are going to do great! And tomato and onion chutney sounds great! I'm out of chutney at the moment and need to get busy and make some more. Don't be afraid, I am sure you have a recipe for it so just follow along and you will do great! Best wishes, Colleen
Colleen ~ I am really wanting to purchase this canner : ) When using the water bath function will I need to sterilize my jars ? Just finished your Rebel potato video. Thanks !
You should always sterilize your canning jars whether you are water bath canning or pc because not all bacteria visible to the eye and if you are putting food inside the jar and there is bacteria in there you are in trouble. Cheers, Colleen
No need to apologize for any “mess”. We all live in real life, and any snarky comments would be made by people who take pleasure in making critical comments, to make them feel better about themselves, I guess. Most people are focusing on what you are doing and not paying any attention to what is in the background.
Thank you Leslie, I try to keep the kitchen picked up as I go but I also like to try do most things in real time so that people see its something they can do in under 30 minutes. Cheers, Colleen
Hello Pamela, the entire recipe is in the description box below the video. Bottom right corner there is a little down arrow. It gives you all the ingredients. Cheers, Colleen
I’ve canned dill pickles twice now, and I have had the same issue both times; I keep ending up with twice as much brine as will fit into my jars. I already half the recipe because I’m using pint jars, but still have way too much brine. My concern is that I won’t have enough salt or vinegar in the jars. Anyone know why this might be happening to me, or if it will be a problem with the shelf stability?
It seems we all over estimate the brine but it should make a different. The equivalents haven't changed. I put excess brine in a jar in the fridge and use it to quick pickle or make refrigerator pickles.
