Making dill pickles! Canning pickles

I show how I make my canned dill pickles in this episode.
Pickle liquid recipe, makes 10 pints
4 cups white vinegar (can substitute 1 cup of apple cider vinegar for 1 cup of white vinegar), 4 cups of water, 2 1/2 Tbs of pickling salt, 1.5 Tbs of sugar. Bring to a boil and dissolve all salt and sugar, take off of the heat.
Seasonings to add to the jars before packing.
1/2 Tsp of dill weed, 1/2 Tbs of dill seed, 1/2 Tbs of minced garlic.
Put all ingredients in the jars with the cucumbers, boil in a caner for 10 minutes and remove.

@@TKCLA little late to the party lol I wanted to say that I am making your pickles tonight. I made sure to read over FDA guidelines and gather the jars and pots I’d need. I’m a 24 year old who just got a home and I’m trying to start small with homesteading as I pay off my mortgage. After days of research (literally), I was beginning to think I simply couldn’t try pickling because the money spent on ingredients would be too big of a loss if I failed. These videos have actually made me understand the concept and process so I know I can at least have some success. Thank you so much for that. PS - I love pickled eggs, do you have a video or recipe for those? ❤

Andrew, I haven’t looked it up but I’m thinking, when you bring the jars out of the canner, you’resupposed to not tilt them. Just leave the water on the top, it will evaporate. Has something to do with not putting pickle juice under the lid before it tries to seal, I think. Love that you can!

Leaches into the pickles, giving them a metallic taste. In other words, vinegar reacts with metal, and causes the metals to “leave” the pot and join the vinegar “party.” Reactive pots are those made from: aluminum copper brass iron

I try never to can my seed's I need my seeds there gold. So this year I had grown a mix of peppers the not really hot kind and I took the seeds wash all seed's and dry on wax well before bagging them then cut into three or two then make a massive batch of Candied Pepper's and can them. Ok my husband needs a talking he blows threw my Candied Pepper's on sandwich and crackers and cheese. I hope to do more I really do. Happy man happy me!

I always put hot liquid in so it doesn't take even longer to boil in the pot or have temperature shock. That was a big bass I caught when I was a kid, my dad had it mounted for me.

I never boil my jars after I lid them. I have before and I don’t like how it makes the cukes soft and mushy. I like a crisp pickle. I just pull the jars out of boiling water so they’re very hot, add my cukes, ingredients and boiling hot brine and they always seal. Never had an issue so don’t see the reason so boil the full jars and cook and the cukes.

You should highly consider placing hot jars right out of the canner onto a nice soft dish towel instead of onto metal because that temperature change can cause the jar to break. My cucumbers are about to start jumping so this video was a great reminder to get my pickle recipe ready!!!

Water canning times will depend on your elevation above sea level. Ensure you can the proper amount of time.

They sale a pickle crunch that goes along way. It makes crunch. I do hot pickles and mix carrot slice, califlower, onions, celery yummy kid's don't eat so fast . Yup that how it goes sneaking jars. Polish pickles with three hot pepper inn.

Broken jars happen, don't sweat. imo empty jars are more susceptible to micro-fractures but I am no resonance expert. I love pickled cukes, but some of the best pickles I have ever ate were the odds and ends leftover at the end of season, you know those bits and pieces that folks like to experiment with. Commercially jarred minced garlic is milder than fresh fyi, not everyone is aware.

Remember to take your rings off after the kids have sealed! Other wise they can come unsealed on your shelf and the ring will allow them to reseal and you’ll never know!

WRONG! The kids can be used over and over. Most people can that are wise can save money reuse lids. If the lids are not damaged they can be reused!It’s called being frugal like people were forced to be in the Great Depression!

Frugal in this case is absolutely foolish. Why risk you and your families safety over a cheap lid? That's horrible advice, botulism can and does kill people. To anyone reading this, be frugal somewhere else and please always use new lids with fresh seals.

@@TKCL You are a fear monger. Dozens of other canning channels say you are wrong. Even the CDC says it is RARE. Botulism can only be contracted in extreme cases of disregard of sterilization. The majority of the 110 cases per year reported in the U.S. are from needles of drug addicts and women getting Botox injections! And if those 110 cases, between 6 and 11 of them die from Botulism. So you are clearly a Botulism fear monger sensationalist! Stop spreading FALSE and misleading information!

i aint no tree hugger butt, i sure hope those faucets drain to the garden hehe. when your boiling on the grain, ya wanna keep it off the bottom. ya break less jars that way... lemon basil, lemon pepper, garlic, 60/30 vinager water and 10 cranberry juice. in the fridge for a few days mmmm!!! tweak it how ya want hehehe. ya know? i got some smokey honey chipotle seasoning at the store the other day. hmmm.... i'm doin it!!

I reuse lids every year and have never had a problem. Sure if one has a broken gasket or something we get new ones but as long as they boil and seal, there really shouldn't be a problem.

No, near sea level 10 minutes is all that is required for safe processing. If you go much longer than that you will have mush. You want some crispness to your pickles.

Pickling is the process, cucumbers is the product you convert. I started with Burpee burpless cucumbers.

Looking good. Now ever had Garlic Carrots sticks? Now that is like the best chips ever..... and Hawaiian Carrot Cake the Hellman's mayo recipe.... it's amazing.... and a squash cake.... but buy a commercial grade round cake pot to make em. Its thicker and gas best results...

Interesting, can't say I've experienced the cloudiness. Mine have a off color, especially when using apple cider vinegar, but never cloudy.

Thank you for sharing your skills. You can use a basin with soapy water to scrub all the jars instead of letting water flow unnecessarily into the drain. You definitely don't have drought problem in your area. God bless you

Yum! Love dill pickles. I have made this year two batches of Mustard pickle. Yes you probably not heard of them as most people haven’t. This recipe goes back to the 1950’s. So good!! Enjoy.

My thumb is still smarting from it's accidental substitution for the squash on the mandolin the other day. Think I too will be using a knife to slice my cucumbers for pickling if they survive the heat here. Your recipe looks good. I'll have to try it.

Natural grapes not good due to drought. My grapes in the garden are doing amazingly well. I don't know why I left that faucet running, I always cut it off. Talking to the camera gets you out of focus.

I love canning:) if I can make a suggestion and that is put a dish towel down and then put your jars on it as it stops the risk of a jar cracking:) I have been canning for years and it really does help:) what kind of cucumber did you use? I've had several ask, if I run another batch I'll see about shipping some. Sadly all I have near me for shipping is the postal service and they are very expensive.

That stick is for measuring your headspace. Take the notches on the end and depending on your headspace you can measure. I think most are in 1/4 inch increments, it should say on the side.

Yes and the other end is for releasing air bubbles, that's why it has a tapered shape to slide in between whatever you are canning. I never use the head space gauge, I always eyeball it.

Hello Andrew that was awesome watching you can your pickle in flip flops man. "LOL" they need to leave you alone about your flip flops man. "LOL" it's too hot to wear socks and shoes in that type of temperature. Man your Garden is doing very well. Look like you going to have a lot of pickles jars this year. I'd enjoy watching that. You can take the ring completely off at that point. The lid should always remain sealed due to vacuum. If you ever find one not sealed, throw it away.

Your information on canning is fantastic.Our country could be set up for major failures in the regular food pipeline in the future and we may have to rely on ourselves for food. Bit of a recipe for you, essentially your same recipe but add mounded teaspoon of rough cracked pepper corn, pinch of crushed red pepper, swap the minced garlic with 3-4 crushed fresh garlic cloves, 3 chopped up with pieces of the green onion (if that makes sense) . Then give the cucumbers a rough chop and do half chopped cucumber, half chopped pepperoncini, a couple slices of red bell pepper to pack the jar. Then here is where the good part comes. In a crock put put a 1-2lb chuck roast, 1 full jar of the pickle/pepperoncini stuff pickle juice and all, 1 packet of the hidden valley ranch powder mix, and then enough beef broth to go up about half way to 3/4 the way up the piece of beef. cook on high till the meat shreds and you got yourself an incredible batch of pit beef for some shredded beef sandwiches and they broth is perfect for dippin. If you make it, please make a vid and get your reaction to the finished product. Wife and I always make 8-10 jars of that pickle mixture for quick crockpot meals throughout the year.

@@TKCL yeah buddy. Also for next year use a cattle panel arch tall enough walk under to trellis your cucumbers. The cukes will dangle through the cattle panel making it much easier to hunt them. Can plant stuff underneath that grows well in shade.

Your pickles look so good! Dill pickles are my favorite. I remember my Mom canning stuff and she would write the date on the lid so that way the older stuff got used up first! Happy eating 😀

What if you don’t hear them pop but the lid is down. Does that mean they sealed ?

Yes, that means a vacuum is pulled on the lid and is sealed. If it's 3vwr popped upwards, don't use if stored that way. If that happens right after processing, put them in the refrigerator and use within a couple of weeks.

I can't find dill seed in my area at this time of year and am making these today can I use just dill weed and if so how much would I add per jar?? Great turtorial thank you so much for sharing!!!

The seed sure makes a difference, but yes you can skip it. I'd double the amount of dill weed I used.
