Dining at Central was an incredible, unforgettable (and not to mention, expensive!) experience.
You won't find typical Peruvian dishes like ceviche or lomo saltado, but you will try an impressive variety of Peruvian ingredients, truly exploring the entire country with a focus on different altitudes.
In 2023, it was awarded the title of "Best Restaurant in the World" by the Forbes 50 Best Restaurant list.
It does not have any Michelin stars- Michelin inspectors currently do not cover Peru.

There are different tasting menus. We opted for the 12-course "Alturas Mater" experience - an exploration and celebration of different ecosystems throughout Peru.
If it's in your budget and you love fine dining, Central is not to be missed. It is a memorable, unique dining experience where you will try ingredients found nowhere else in the world. One might describe the food as overly complicated. A big part of dining at Central is being able to try unique ingredients found in seemingly impossible places.
If this isn't something particularly exciting to you, you might find that your money is better spent elsewhere- and Lima has no shortage of amazing restaurants.
PRICE:
At the time of this posting (Jan 9, 2024), this degustation is priced at 1260 PEN (about $341), not including drinks, extras, or service.
HOW TO GET A RESERVATION:
Okay, you've decided to go to Central. Now, how on earth can you get a reservation? They take reservations in four-month periods. Each period opens approximately thirty days prior to the new reservation period.
Honestly, their reservation system on their website fills up instantly when it opens. I monitored their site off and on for half a year without any luck. I figured it would just be something I would have to miss out on.
Once we were in Lima, I checked every day. One day, there must have been a cancellation because there was a space! But within the 5 minutes I took to fill out the reservation, it got filled. A few days later, there was another last minute cancellation and this time I secured our reservation.
So, I recommend constantly checking. You can also contact and hire travel agents to do this for you.
DRESS CODE:
There is no dress code. Come dressed to the nines or in casual clothes. It was our last day in Lima and we came in clean yet casual clothes. I even had on hiking boots!
The staff are used to travelers and have no problem with backpacks and suitcases, they are safely put away at no extra cost.
The exact tasting menu changes with the season. This was our experience in October 2023.
