So it's 9:15 pm on Valentine's Day and I have to tell you, I made the complete menu from this video. It was out of this world!!! Everthing was as you said and turned out amazing!!! I am a fan for Life!!! The Mousse is so decadent...I have a feeling it will be calling me from the fridge later tonight!!!! My next mission Coq au vin. I had to tell myself to settle down when I read the notice the video was up. Hitting pause, grabbing a snack to enjoy the video. This is a meal I am making for my husband and now a couple friend of ours tomorrow. Told then what I was making and they laid the guilt on. We have been friends for 30 years and all were in each others weddings. It seemed fitting- I love them also :0) I am going to make a few things tonight and am excited to make the potatoes. Your talents are amazing in teaching. You have amazing style, I adore Leonard and Frank Sinatra did the best NY song. Thank you, and your amazing assisting staff. A production like this takes many talented people and a tremendous amount of time. It does not go unnoticed on my end. With that said, Happy Valentines Day, spread Love, eat good food and drink good wine.
I am happy to report that I had a successful dinner party last night!! The food was divine and pretty effortless to do when following your instructions. It would have been far more difficult and less of a success had I not had the video to follow and just written recipes to go by. Here are a few keys I learned and had my guest comment on. First- yes, make your own cocktail sauce- it is so much better and my guest noticed the difference. Second- 1.5 inch steaks. I have been cooking 1 inch steaks- Who says a half an inch doesn't not matter :) The Chocolate Mousse was heavenly, period. The potatoes were a nice change to a mashed or baked. They were so crispy- huge hit. The Shrimp were wonderful. A perfect appetizer with a cocktail before dinner. I made the cocktail sauce and mousse the night before, cleaned my shrimp and had them ready to go. I am a writer, I work from home so I had plenty of time to prep, cook and have my kitchen looking decent by the time my guest arrived. I grilled the steaks outside, the added butter at the end- another key to success. I adore watching your videos, Lenard makes me smile. Your kitchen is beautiful and looks well thought out. I laugh at your ringtones on your your phone for a timer. It is all of this that draws me to your teaching videos. I am hosting for Easter in April for ten. I plan to do either your Fancy Dinner Party or your Chicken Dinner Party. Oh the dilemma...... In closing, I respect the effort this takes and the talents that are involved. Sending my best to you and your fabulous team. Food Network needs to open an 1 hour time slot for you!
I have just discover these videos !!! I have watched as many as I could find and seriously hope to discover many more. Hey Randall, just cooked the mousse... AMAZING! (tho it is still in the fridge)... I had a dark chocolate bar (76% cacao) so I had to add more sugar to the egg whites but it worked and the chocolate is super good quality. I also added mexican vanilla beans in the chocolate mix and it worked so good. Thank you very much! Your kitchen is amazing by the way. Best regards from Mexico City

First thing that came to mind about best song of New York is "Native New Yorker" by Odyssey. One hit wonder. Also your mise en place is like Mis En PALACE. Love it. I need a whole counter on its own for my vinegars and honeys, and salts and spices and sauces.
Hi Randy. Love you and love your show! I go back and look at this episode because I love it. I have a nice variation on the shrimp cocktail cups. I use endive for the cup--or shrimp delivery system-- with a remoulade decked with fennel (fronds and stalks) and capers. Mayo based with a hint of cayenne, black pepper, lemon. You could hit with a hint of dry sherry. Chop the shrimp to bite size, so the endive gives two bites. Cute on a platter and I thought you might love it.

When making the mousse or anytime you're tempering egg yolks, it's quicker to add about a third of your hot mixture to the yolks and mix it in to bring the yolks up to temperature then pour it back into hot mixture continuing to mix. I like your video though.
Not interesting, but I think it's sortof funny. I used to think the song "Empire State of Mind" said "New York; concrete jungle, wet dreams and makeup" instead of "New York; concrete jungle where dreams are made up"😂
