Dinuguan is also a delicacy in Greece. The Spartan meal of melas zomos, or black soup, was made of boiled pigs' blood, pork, and vinegar. It is probable that the source of the name fritada for the Guam dish came from a dish of the same name in Monterrey, Mexico where it refers to a stew made with the innards and blood of a young lamb.
This dish was brought to Hawaii over half a century ago by Filipinos contracted to work on sugar plantations . You can even find it every day at Japanese and Chinese lunch shops and has been very popular amongst Hawaii's melting pot of nationalities for generations. It's also common to see locals have it for breakfast served with a fried egg on top.
I took a few coworkers to a Filipino restaurant called Bruja in Brighton as they were insistent on trying dishes I ate. From the pancit, chicken adobo, dinuguan and lechon kawali their favourite was the dinuguan. I'm glad more people are willing to try our food.
I had my first dinuguan at a relative's party when we lived in the Philippines. They told me it was "chocolate" stew. So, the 8 year old me ate two bowls with puto and loved it! They forgot I'm part Irish german, my grandfather often served us drisheen and blutwurst, both blood sausages so dinuguan didn't faze me at all. Jokes on them!! 😂😂
You can tell right away, these ladies will love visiting the Philippines someday 🇵🇭 if they love our food they'll probably enjoy experiencing our islands, culture and hospitality ❤
Actually, we are flying to the Philippines this June and my daughter is bringing her best friend from LA and I will be bringing my sister in law which is from Mexico, they will experience the hospitality and the beauty of our Country! Cannot wait!🤭

@@eggy2229 My kids will say yuck if I told them it's blood. Busy as I am, I have no time to fix them another food. Besides, I don't normally cook Filipino food like dinuguan but order it. "Mom" what is this? It's dinuguan. What does that mean, Oh it's chocolate meat." They found out as they grew older though.
4:21 The 'unexplainable' thing she's referring to is actually umami. Blood has a _lot_ of glutamic acid (or glutamate), which when cooked is one of the reasons why there's that tastiness that's often associated with umami. Edit: The best dinuguan I've ever had _definitely_ has to be the one I had in Ilocos (one of the northernmost provinces). It was *very* thick and meaty, vinegary, had a lot of garlic and chili, and was packed with salty _chicharong bulaklak_ -- which is deep-fried connective tissue you'd find in the abdominal cavity. Exceptionally good, especially with beer. Shaved off maybe a year or two off my life with all that cholesterol. Still worth it though.
I agree po. Other provinces cooked dinuguan that tasted a little sweet. I didn't like it. I like dinuguan to have garlic, vinegar, and lemon grass and taste a little salty.
We each have our opinions to taste but my favorite Dinuguan was from Cagayan De Oro. Tasted Ilocos, and almost every other city’s dinuguan but that was definitely my favorite.
In Scotland, we have black pudding which is blood sausage, sometimes I use it to make dinuguan. My five year old saw me eating dinuguan one time, he asked if he could have some so I gave him a bite before I know it he’s finished it all 😂

Dinuguan like adobo also has a bunch of variations depending on the province. In our province, we cook dinuguan dried and we mix it with chicharon or kawali (whichever available), not too sour but kinda sweet and cruchy, with a touch of spice.

In France they have a similar dish hare ale royale or royal hare) is a classic dish of French cuisine. A whole hare is slowly braised in red wine and served with a sauce made from its blood, heart, liver, lungs.
There is usually at least one person that gets freaked out hearing there is blood in it before eating. I recommend letting people try the food first. Very good that they all ate it with rice (probably because they were all nervous about the blood). I would also recommend having people eat the Filipino way - with a spoon and fork. (So much easier to eat the meat and rice together with a spoon!)
Nah, its rude to feed someone something without explaining or describing what it is. Let them make the choice. You may unknowingly violate their cultural or religious beliefs. You may also trigger allergies. This is especially true with karekare since it contains peanuts.
Wow nice idea, dinuguan with sriracha sauce. There's other versions of dinuguan that are intentionally made hot and spicy, but sriracha might add something more than just spiciness

Actually, it doesn't only exist in the Philippines. Cooking with blood has a long heritage in Europe especially in France, and certainly most countries in Europe have their own version of Blood Stew. Blood sausage or black pudding is basically pig’s blood and fat (and often onions), encased in a length of intestine, and is thought to date to ancient Greece. Our very own Dinuguan is one my British husband favourite Pinoy dish.

One of the best dishes I've ever eaten. I was told as a kid not to eat it as it's unhealthy/unclean by my parents so I never tried it right away. I know it can put some people off, but I remember eating this after an exhausting week in our Boy Scout jamboree (no other food was served) and man did it taste good. Still have a craving for it to this day.

Filipino Cuisine: dinuguan, batchoy, chicken pinikpikan (chicken beaten to death, also called "killing me softly chicken"), balot or balut (boiled 18 days old fertilized duck eggs) & any kind of food WITH BLOOD IN IT, & strangled animals & EASTER EGGS. ❣️ ❣️ Concerning the Gentiles who believe, we have written and decided that they should observe no such thing, except that they should keep themselves from "THINGS OFFERED TO IDOLS" (e.g. foods served at the feast/fiesta & EASTER EGGS), from "BLOOD" (any kind of food with blood in it), from "THINGS STRANGLED" (strangled animals), and from "SEXUAL IMMORALITY." > Acts21:25 ❣️ ❣️ "IF YOU KEEP YOURSELVES FROM THESE, YOU WILL DO WELL." > Acts15:29 ❣️ ❣️ The LORD said, "Every moving thing that lives shall be food for you. I have given you all things, even as the green herbs." > Genesis9:3 ❣️ ❣️ Only be sure that you "DO NOT EAT THE BLOOD", for the blood is the life; "YOU MAY NOT EAT THE LIFE(blood) WITH THE MEAT." (e.g. dinuguan, batchoy with blood, BALOT) You shall not eat it(blood); you shall pour it on the earth like water. You shall not eat it, "THAT IT MAY GO WELL WITH YOU AND YOUR CHILDREN AFTER YOU, WHEN YOU DO WHAT IS RIGHT IN THE SIGHT OF THE LORD." > Deuteronomy12:23-25 ❣️ ❣️ (The LORD said), I will set My face "'""AGAINST THAT PERSON WHO EATS BLOOD'""".. > Leviticus17:10 ❣️
For me it's a choice between the Ilocano version and the Metro Suburbs version (which is a more metro version of Tagalog Dinuguan). I remember the Ilocano version which is spicier and almost dry, with the grease mixing and adhering to the blood gravy and meat. It's also light brown colored. The Metro Suburbs version is something like the one featured in the video albeit with some added garnishings not usually associated with the dish or the Tagalog version. Normally they'd use the bigger long green chilli usually used in Sinigang. Some folks from Bicol would even add "gata" or coconut milk, an ingredient prevalent in Indonesian and Thai cuisine. Since ASEAN nationalities share the basic ingredients and taste in their culinary repertoire, it does surprise me that "Pork Stew in Pork Blood" is unique to the Philippines, I mean I haven't even heard of a similar dish from Northern and Southern India which has influenced many cultures in SEA.
I guessed huge population of Indians are either not allowed to eat pork or being discouraged to eat pork. When I had a business trip in India, particularly in New Delhi, I saw several times on the roads, tall & slim pigs scavenging on the pile of garbages like stray cats & dogs. I asked then our Indian driver why is that. He said their government is allowing that to discourage the population to eat pork. And, there are a lot of Muslims in India as well despite it is a majority of Hindus... The same thing in other ASEAN countries... mostly are majority Muslim or Hindus...
@@jakedesnaque8910 I beg to disagree about ASEAN nations being mostly Muslim. There are only 3 nations so far that are majority Muslim populations: Indonesia, Brunei, West Malaysia, the rest of ASEAN are big on pork dishes and pork eating. I don't have stats to support this statement, but it's common ASEAN knowledge that only the 3 major countries I mentioned are majority Muslim population, yet they do not necessarily ban pork eating outright as their populations, except perhaps only Brunei, are hugely mixed with Chinese, Buddhists and Catholics and Christians and Hindus.
@@tuberobotto I agree.. Only 3 countries in ASEAN are Muslim-majority... But I guessed, a huge population of Muslim & Hindus comprises the ASEAN population being Indonesia having the most number in the muslim world... It is just a wild guess! 😅
