In episode 1 of LASA EXPLORATIONS: CORDILLERA, the Lasa crew arrive in Baguio City and are welcomed with a ritual to start their journey, during which they are introduced to some of the region’s signature dishes.
No matter where we come from, nothing brings us together like sharing a good meal. LASA EXPLORATIONS is an independent food docu series dedicated to discovering hidden culinary gems around the Philippines. “Lasa” means taste in Filipino, and lasa is our gateway to learning more about our own culture and history.
The Philippines is scattered across 7,000 islands comprising several regions, each with their own distinct cultures and countless subcultures. Among these, only a relative few are known about beyond their places of origin. Lasa Explorations wants to contribute to expanding the conversation, to explore and appreciate the diversity of Filipino food and culture--one dish at a time.

Finally! I still think Cordilleran Cuisine is underrated which is a good thing in my opinion. It preserves the uniqueness of upland foods. Thanks for sharing.. Mangan tako!

Cordillera food is different from the rest. It’s food from centuries ago and not something made up a few years ago

As a 2nd generation Filipino-American I am so lost when it come to my own culture. I have Black, Latino and native American friends who are trying hard to "Decolonize" their understanding of self as well as the food that they eat. With what you are documenting in your series, the indigenous part of my culture is still alive and not too far off. Many of my other friends have to reference history 4-5 generations back, exploring aspects of culture that is no longer in practice. Even though my parents taught me "You're American Now, you're not Filipino." I'm still very proud of who I am and where my family came from.

I like that it also featured the preparation part. Cordilleran cuisine is much better experienced in a community feast, that includes the preparation, in my opinion, also fresh meat. I've always watched my brother and cousins prepare it from the start to finish every holidays and celebrations. If I heard that they'll be butchering a pig for a celebration, I always come running when I was a kid. Also I love the soup, especially if it has a a bit of sour taste to it, it's taste is quite distinct from a regular sinigang.

Igorot is a term use to call all the tribes and sub-tribes of the Cordillera which means people of the mountains. My late father and grandfather usually let us prepare Ibaloi salad. Ibaloi being a sub-tribes of the Cordillera Region that are from Benguet Province. Very simple sliced tomatoes, onion leaks and fresh chilies and salt.

Incredible work everyone! Your passions to dig deep into our food traditions is greatly appreciated; you’re helping to connect us to the how and even the spiritual and historical why. Itching to ditch Hawaii to visit and dig deep myself; love the education you all provide!

Pinuneg and kiniing or kinuday were the best specials of Benguet. "Polpog" pa sana yung magmix ang "tapey" rice sa pulutan na inihaw, da best at "binubudan", fermented kamoteng kahoy..mga yan ang da best ng Benguet.

In Cordillera, you can do anything in the old days. You can eat 8x a day, drink rice wine after doing chores, eat freshly baked bread after building someone's house, drink Etag broth with rice ( best fat free pork broth), and so on. Everything is affordable.
