Ex contractor; good thing you use it outside. Those light dimmers are just that. They max out at 600 watts each. If I recall the wire to the plug an those $15 hot plates is 14 gauge. Two hot plates is 2,200 watts. Never run a wire that tight. I never run over 75-80% and I hope you run it on at least a dedicated 20 amp circuit. I'm sure you don't run it on high for that small box. You did a nice job on your build. I'm just leaving a comment for people who stop by and think they may want to copy your build. 40 years of contracting, no electrical fires because I always build for safety. I made an almost exactly the same. Instead of the hotplates i just took an grill element from an oven. And I used an old sauna stove timer and thermostat to control the heat.
Was planning to try the same idea with my free Brinkman vertical smoker, then today I found a Char-griller patio bistro electric grill for free. I gutted it for the element and dial controller and with a Dremel and a drill I installed it. Wish I could share the pics.
Picked up a char-broil offset .. plan on doing a conversion with a hotplate was not sure 1000w would do (24w x 12 deep plus a 12w x 11d firebox) .. may need to get a 1500 w plate since no room for 2
You would be better off putting 1 of the burners on high and 1 low than both at medium. Otherwise it won't be hot enough to create enough smoke. Use the second burner for supplemental heat when the first burner isn't enough.

Judging from your truck, residence and n'hood, you can afford a $300 made in China electric smoker that is less likely to burn your house down. To say nothing of your ribs and briskets.

5 yrs but thanks. I have a big offset smoker that is hard to get hot enough to finish cooks. I don't want to mess with adding charcoal to the main chamber for heat and I can have my fire box blazing and it doesn't add the amount of heat I need consistently ... finishing a brisket or ribs.. 300 or 350. I think a heating element and controls from a scrap appliance or a cheap FB smoker will do it. Next level.
