Hot & Cold Smoker Installed & Used for First Time

Last year I built this beautiful hot and cold smoker but never got to use it. in this video I install and fire up the smoker in our garden and cook some pork ribs, a jowl, and some chicken.
I used oak wood for the main fire and supplemented with fruit woods to layer the smoke. The food tasted so so good. I'll be making more videos to over the process of preparing the meat and both hot and cold smoking.
I didn't use linseed oil to preserve it, I will get peanut oil next time we go to the city.

Thanks, funnily enough I opened it up today to take a look as it’s not been sued for a while. It’s still perfectly ok other than a few ants that had made a home. I always say our climate is extreme but yours is a whole new level :)

@@BalticHomesteaders yeah it can get pretty cold here. We are luckier than most as we are in a micro climate area and our winter temps do not get as low as other places around us.

I love it! Beautiful work. You captured the story of how bbq and smoking are personal experiences that are meant to be shared. Like a good brisket this project was destined to evolve low and slow. Congratulations!

Soak your apple wood in water or apple juice for a couple of hours to create more smoke

Yeah good point. I have my digital one which I prefer for accuracy I guess I could add an analogue one as well. I found the temp did vary within the cabinet itself and I need to understand that more.

Do you mean wood preserve? On the top I burnt the wood (see build video) it’s a Japanese method. I didn’t preserve the sides but this year I may consider using natural linseed oil.

This is very impressive. While I am a "city person" (who loves the country) and have no desire myself to do this, I recognize and appreciate the skill, effort and planning involved. Question out of pure curiosity - can you/do you plan on smoking fish? I ask both because I love smoked fish as did my (Latvian) father and grandfather.

That temp what looked like 160˚ C. Was that inside the smoker? What would be an ideal temp to have in there? Or is just the colder the bet ter? Greetings from the other side of the Baltic

Hi so it peaked at about 140 I think but the average was around 100/110 for a hot smoke that’s fine. It’s quite difficult to keep it at a steady temp because of the fire but the long tube really helps. I’ve not done any cold smoking in it yet but I do have the tray to put the sawdust in.

Yeah way hot enough, have you seen the second vid where I fire it up? Had over 150c in it at peak but prefer low and slow obviously.
