Girls Night In Recipe Ideas
Coconut Shrimp
1lb shrimp - de-vained and peeled ( with tail is fine too)
1C flour
1C Panko crums
1C coconut shavings
2-3 eggs
garlic salt to taste
paprika to taste
Coconut Oil
Wash your shrimp and season with garlic salt. Coat shrimp in flour, then egg wash and last roll around in panko and coconut mixture. If you want it extra crispy then dip it again in egg wash then roll around in panko and coconut mixture a second time. Turn stove on Medium-high and add coconut oil. Once pan is hot add shrimp and cook for 2-3 minutes on each side. If you notice that shrimp is getting brown too quickly then turn the stove down a couple of notches. Once shrimp is fully cooked remove from stove and serve.
Baking option. Follow instructions above and cook for 15-20 minutes on a 400 degree preheated over. Turn the shrimp once at halfway.
Mango Dipping Sauce
1 mango
1T cilantro
1t coconut oil
1/2 small garlic
1/2 small lemon juice
1/2t lime zest
1t sugar
1/2t tajin
Blend everything together. If you want the sauce to be sweeter add more sugar, if you want it to be more tart add more lime juice.
Heart Pasta (found it at home goods)
1 package of pasta of you choice
1/4C extra virgin olive oil
1/2t lemon zest
1T minced garlic
chili flakes to taste
Cook pasta following instruction on package and don't forget to salt your water!
For sauce:
Turn the stove on medium- low and let all the ingredients cook for about 10 minutes. If the oil starts to bubble then turn the stove to low, you don’t want to burn the garlic. Once pasta is done, turn the oil off and add drained pasta. Sprinkle with your cheese of choice and serve.
Layered Pound Cake - this recipe is for the family size (cut the ingredients in half if you are making the regular size)
Sarah lee pound cake (family size) - found in the freezer isle
Candied Strawberries
1 carton of fresh strawberries
2T or more powder sugar
Cream Cheese Filling
2 8oz package of room temperature cream cheese
1C powder sugar
Whipped Cream
1C heavy whipping cream
1/2C powder sugar
Layer pound cake, cream cheese filling and strawberries then use whipped cream as frosting.
