From a one person workflow standpoint, having the steam table on the other side of the cart from the griddle is going to add a whole lot of walking around. Griddle and steam table should ideally be side by side. Also the griddle behind the wheel well is awkward. What if the griddle slid up to where the freezer is now, put the steam table where the griddle is, and put the freezer on the other side where the steam table is now? There will be much less walking around that way, and, with the freezer on that side, there will be less risk of contamination from hand washing.

🤔😬🙈 I can tell you from long experience that straddling that tire is an absolute miserable experience and back killer... and hugely time consuming. I had a set up similar to this and suggest that anybody looking into this kind of design move all your equipment away from the tire and hitch that you need to access repeatedly. With this kind of set up, you're going to be walking back-and-forth a lot, and covering a lot of territory repeatedly. I strongly suggest you concentrate all your items/equipment that you need immediate access to in one area, and this will be your primary working spot, then your secondary spot should be no more than a couple steps away, and so forth.
looks like something a military group would use.. ill stick with a traditional stand or trailer. i think there are applications for this but street side food vending is not where this would do well. also most places ive seen you must make everything on site not just heat up things unless they are sealed.
