You want us to be honest. I personally think for the first time you did well. I did not fully appreciate it until you opened the container, and I saw the entire finished product. The Chana looked amazing, and I know the taste was exceptional. The seasonings alone would have made it get a 10 out of 10. Your presentation of the entire meal gave you a 9 out 10. Only because you have to perfect the doubles shaping. However, you are an excellent cook. God bless you and your beautiful family.

Goodmorning vedish u are put all the channa to boil. Together. Don't have to cook like that but anyways next time u. Know ok. U need leeya in the kitchen with u. A woman touch. This is how I cook doubles channa. 2 tins channa ( drained and washed) Blend shadon beni, 3 cloves garlic and 1 large pimento - we will use 1 tbsp of this blended seasoning. 1/4 tsp geera powder 1/4 tsp baking soda 1/2 tsp salt 1/2 tsp turmeric powder. In a pot put 3-4 cups water to boil ( just about 1 inch more water than the channa). Add washed channa to boiling water and cook about 5 mins - constantly removing the froth and discard from pot. Add blended seasoning mixture, turmeric powder, salt and pinch Geera powder. Allow to cook until mixture begins to slightly thicken. Using a wooden spoon, gently from middle of pot, slowly drag spoon towards 4 cardinal points ( east, west, north and south) until you get the channa consistency desired. Taste for salt etc and voila! Tip for bara as well- after the bara raise, remove from bowl onto oiled counter top and slightly knead to smoothen form. Grab the dough and gently squeeze small balls between thumb and pointer finger - this will give more uniformed size for the bara and ensure a smooth surface when bara is stretched out. *** Do not use more than amount or extra of the baking soda in channa or it will result in a metallic taste in the channa. Hope this helps.
Hi Vedesh I agree with you the two things I will never put on doubles is sweet sauce and cucumber how did cucumber enter on doubles I have asked myself that question and cannot get an answer
For first attempt u did good.. but next time make dough balls and then stretch it out.. it’s easier to shape & handle.. also less curry in the Channa for sure!!
Vedesh you did well for a first time..but note that doubles channa is boiled only with seasoning and geera not chunkay with curry. Also you have to use oil on your hands and must make your loyas before spreading. Your dough was just a little too soft. Next time add a little baking soda to the channa to get it soft. But full marks for effort👌👌
I’m not so sure that curry belongs in doubles. You asked for honesty, so, no, I wouldn’t buy it. At-least you tried. Future iterations might be better. 👍
