So far iChang cook common Malay-Malaysian dishes. We still have Indian-Malaysian, Chinese-Malaysian, even Iban, Kadazan, Murut, Melanau, Dusun have their own traditional dishes, beside dishes by country (masakan negeri) such as patin gulai tempoyak (Pahang), various laksas (Kedah, Penang, Johor, Sarawak), asam pedas (Melaka), gulai cili api daging salai (Negeri Sembilan), nasi dagang (Terengganu), mi kolok (Sarawak), etc.

iChang, i have a Malaysian tip for you! To eat the nasi 'compressed rice', just use the satay sticks to poke the rice and pick it up. That way you won't have to get your hands dirty. Even if you eat the satay halfway, you can just use the empty part of the stick to poke the rice and garnish to dip into the peanut sauce

Loved it. My kids miss Malaysian satay so I'm going to take inspiration from you and make some myself. Both of you always seem to have so much patience with the long preparation process. I'm impressed that Jimmy fried and ground the peanuts, rather than buying ready-made paste. To stop the bugs I always leave my spices in their plastic packets and store them (and flour and sometimes rice) in the fridge. If you dont have space for all your jars in the fridge you could put the ones you don't use often in. But you have to be careful where you bought them from. Sometimes the shop didn't store them well or they are old already when you buy them.

Hey @iChangRM, 1. you need to fried (tumis) those blended ingredients + chili paste, until the oil split it's or Msian called it 'pecah minyak'... This to ensure caramelization of the onions to make more sweeter & get rid of the pungent smell of the chili paste (also lower the spice level) 2. Use blanched peanut instead & fry those. If using skin one, fry the peanut without oils until bit darken, you can remove the skin using colander or by hands (careful it hottsss)

Oh yes, my number 1 favourite dish in Malaysia. Satay! Wouldn't mind queuing half an hour for this! HAHA... btw, iChang wearing white shirt while poking the meat, so daring! LOL

u can fry the satay on pan as well. since i stay in apartment, it is bit hard to grill the satay with the smoke. so, fry it. it is still delicious. btw, i prefer beef or lamb 😍😍

you can make the nasi impit (compressed rice) by putting 1/6 rice into 1 plastic bag and sealed it with those heat sealer or running it on flame and pinch the melted plastic to seal it. then poked it with fork to let the water runs in the bag. then put it in boiling water the wait for it to cook. the rice will expands and full in the plastic.

For the satay, only the meat part will allow to contact with charcoal fire. The bamboo skewer will be rest on the burner rim which do not contact directly with fire.As the result, you may get a “clean ” skewer and of course the stick. won't break.

I think the recipe for beef satay is different. Beef satay is normally in darker colour where as the chicken satay is in yellowish. I like beef satay in KL more than chicken satay. It is more tender and juicy.

Personally i like thin slice sate so more flavour when you marinate it. Put some honey at finishing to add some sweetness(caramelize). BTW omg you use high marbling beef(wagyu)?
@edmondlo74
@edmondlo74 4 года назад
saini88able yes, I prefer that too. Thinly sliced meat Satays are more authentic and tender whereas thicker chunk meat satays are more for western taste.

Hello! Jimmy. Hello! IChang. To simplify the satay recipe use sugar and vinegar, stir them well to your taste and later on add turmeric powder. Marinate the meat in the mixture and put it in the refrigerator for sometime. Later skew the. Marinated meat, skew and grill.

I salute Jimmy for cooking all by himself while iChang went out. The results look super nice. I usually prefer beef. I guess they put slightly different ingredients for beef marinade recipe.
