I am confused on the” 4000 hours of work experience” for the board certification portion. I have been a truck driver for the last 2 years. If I make it 3 will that count or should it be in a health related field?

You would have to check directly with the NBHWC. They are very receptive to questions and have regular info sessions on the requirements. I encourage you to check out their website.

For me, since there are so many folks calling themselves health coaches with a weekend course or selling products, I'm a fan of certification to bring credibility, educational standards and a clear scope of practice to our field.

You can practice after completing an initial health coach training. To be board certified you need to do additional training and sit for the NBHWC exam.
