I was in Ecuador in 2015-2016. I absolutely fell in love. I didn't d not get to do or see as much as would like. Thank you for sharing your experiences in places other RU-vidrs do not go. For some reason they do not like to do food videos which I love as well.

Yes and no! This is video 23 of 50. I had no idea when I started that I would have so many videos but there was so much to share. That said, I've already bought a flight back here for the beginning of January so I'll have two more months here and then I need to decide what country to visit next in March.

I wear flip flops most of the time, just cheap ones. If I am hiking I have a pair of Colombia hiking sandals and Chacos are always a good bet. But this is for the coast only. In the Andes you'll need closed toed shoes. I use a pair of street sneakers and then I have hiking sneakers for hiking.
@@ayngelina I've lived in Mexico for many years. Currently I've been living in Cuernavaca Morelos about an hour and a half from Mexico City. I've also lived in San Miguel de Allende Guanajuato, my mother owned a home there for 12 years. San Miguel has been voted as one of the best small cities in the world to retire in by Conde Nast Magazine. I think Cuenca or Manta might be interesting places for me to live.
@@Resmith18SR ok good reference. So I think Cuenca would be most similar to San Miguel de Allende in that it's a beautiful historic city with a lot of expats and it probably has the most English spoken by locals as well. It is a bit chilly in the winter, you'll need pants and a sweater in the evenings. But Cuenca is safe, and a hub for gastronomy. Also there are lots of great little towns around it. Manta is a big city on the coast. I haven't spent much time there but I'm going in January to explore. Driving through it smells disgusting. But Manabi has amazing beaches and as it's a city it has good access to most things you'd want, unlike other beach towns. Safety is a bigger concern and I think choosing the right neighbourhood makes or breaks the place.
@@ayngelina Thank you so much for that Angelyna. I wonder why Manta would have a bad smell but I'm sure you can tell me more after you go there and thoroughly check it out. It looks nice there on various videos I've seen on RU-vid.
@@Resmith18SR oops I thought you knew! It's an important city for tuna fishing and there are processing plants there. Not all of the town smells, driving on the highway through Manta is bad and some parts of the city smell, kinda of like cat food from the tuna. I love fish but it's not pleasant driving through.
6:34 if i can recomend my favorite fish Is camotillo. camotillo Is a fish that eat shrimps every year and u can try the two flavors un the first taste. U Need to try camotillo al ajillo have amazing flavor!

Siiii, yo nunca vi tampoco! Los Percebes son deliciosos pero se ven muy inusuales. Vale la pena probarlo, también he probado el pulpo en otros lugares de Ecuador, pero este es, con mucho, el mejor.
Thank you Estela, I bought it in Sigsig but I have always struggled wearing a hat in the sun. Yet the radiation is too strong in Ecuador and I know I need to wear one more often.
Encocado doesn't traditionally have tumeric, the yellow colour in many foods usually comes from achiote. Although tumeric is possible as he said it was a secret and tumeric adds colour but not flavour.
@@ayngelina I always thought that achiote had an orange to reddish color. Is it possible that the southern part of Ecuador at one time, or the host had a Caribbean influence? That might explain the use of Turmeric from the immigration of east Indians.
@@Dana-ie2bh yes it's absolutely has an orange colour, but often mixed with other ingredients such as coconut milk it comes out more like a golden yellow. Alfredo wouldn't share, understandably. But I also had an amazing encocado on the Galapagos that had a vibrant yellow colour and they said they would share the recipe... I'm still waiting but it's a good reminder to get it.
@@ayngelina Achiote doesn't have much flavor either does it? I'm always amazed how some recipes are really really good when the flavors are married and layered to create depth with the complexity, and how some recipes are really really good when they are kept very simple and rustic allowing the main ingredient to shine through.
@@Dana-ie2bh yes exactly. I find achiote is meant to be a secondary flavour, it gives a dish some depth but doesn't really shine as a primary ingredient. But that's true in a lot of Ecuadorian dishes. I can often taste cumin, garlic or lemongrass but I usually have to ask if there are other ingredients and almost always achiote is in there somewhere.
El restaurante no es barato, pero diré que tiene mariscos y pescados de alta calidad. He tenido muchos encocados y ese fue definitivamente uno de los mejores.
