Vegetarian Enchilada Rice
Ingredients:
1 tablespoon oil
1 tablespoon garlic
½ cup of purple onion
1 cup bell peppers
1 cup tomatoes
3 cups of water
1 ½ cups of brown rice
1 cup black beans
1 tablespoon cilantro
1 cup tomato sauce
1 teaspoon chili powder
1 teaspoon cumin
1 teaspoon salt
1 teaspoon pepper
1 cup of cheese
Optional:
Avocado
Eggs
Instructions:
Cook brown rice in the instant pot.
While rice is cooking, heat oil in a large skillet.
Saute garlic and onion for a few minutes. Add the bell peppers and saute until soft. Add the tomatoes and saute until soft. Add the brown rice.
Add the black beans. Stir. Add the cilantro, tomato sauce, chili powder, cumin, salt, and pepper. Stir. Sprinkle cheese over the top and bake at 400°F for 20-25 minutes.
Sprinkle with avocado (optional) and fried egg (optional).
White Chicken Chili (I did 1.5 x's the recipe)
4 large chicken breasts
one medium onion, chopped
one can black beans, rinsed and drained
one can white beans, drained
1/2 cup chicken broth
one can rotelle tomatoes
1/2 packet of Ranch seasoning
1 tsp cumin
1 tsp chili powder
1 cup (block) cream cheese
cilantro
Place all ingredients except cilantro in pressure cooker. Cook for 20 minutes on high pressure, 10 minutes on warm before releasing pressure. Shred chicken and add cilantro.
