Chicken Spaghetti - I did not show much of this but it was amazing! Every time I make it, the kids ask me to make it again soon.
Servings: 12 people
Ingredients
4 small boneless skinless chicken breasts
4 teaspoons Italian Seasoning
Salt/Pepper
4 Tablespoons olive oil
8 Tablespoons butter
2 small yellow onions, diced
6 cloves garlic, minced
8 Tablespoons flour
3 cups chicken broth
1 ½ cup milk
8 oz. cream cheese, softened
2 cups cheddar cheese, shredded
2 10 oz. cans of diced tomatoes & green chilies
16 oz. Thin Spaghetti
chopped parsley, to garnish
Instructions
Preheat oven to 400 degrees.
Cook the Chicken (Optional. You may also use cooked chicken.)
Cube the chicken. Pat the chicken dry and season lightly with salt/pepper and Italian seasoning.
Heat the olive oil over medium-high heat and sear the chicken on each side for 5-6 minutes. Remove and set aside.
Make the Sauce
Reduce heat to medium low. Melt the butter in the same pot and use a silicone spatula to clean the chicken bits from the bottom.
Add the onions and cook until softened, about 4 minutes. Add the garlic and cook for 1 minute.
Sprinkle flour over the onions and toss to coat. Cook for 2 minutes, until you can no longer smell flour.
Add the chicken broth in splashes to maintain the thickness. Stir in between each splash. Add the milk next, a little bit at a time. Whisk until combined and smooth.
(Now is a good time to start boiling the water for the pasta. Cook it according to package instructions and drain once finished.)
Meanwhile, let the sauce simmer and reduce while the pasta water heats up. Add the softened cream cheese and stir continuously until melted and smooth. This is more difficult if the cream cheese is cold.
Reduce heat to low and let the base cool a bit. Sprinkle in the shredded cheddar and stir to combine.
If you’d like to thin the sauce out at all, add a little bit of the juice from the diced tomatoes, otherwise, drain the juice and add the tomatoes along with the chicken. Stir to combine.
Stir in the spaghetti.
Garnish with fresh parsley. Enjoy!

I love how you have your children learn life as well as regular school subjects. They will be prepared for anything that comes and able to figure out what they need. So many kids are lost because life doesn't always happen just like what they read in a book. Thank you!

I always have to clean the kitchen before I can even start cooking. You will always find I have a sink full of hot soapy water, so I can continue to clean as I go. I try to have all the ‘work’ dishes do before I serve. I live with my 95 year old Mother, so I do all the main cooking but it doesn’t take very long to have all surfaces messy. I can imagine with all your helping hands and the amount of food you need. Your goals of eating ‘clean’ and prepping all you can is very impressive. May God continue to bless all of you. You, your husband and your beautiful family are living examples of following Gods path. 💐

My Mom taught both of my brothers to cook, clean, iron, do laundry, so they didn't have to get married because there we're hungry or had dirty clothes. I taught mine boys also. and of course my daughter. It's so nice to see more of Luca . He is so handsome. all of the kids are handsome and very pretty.Great job Mom and your helpers. GrandMa is such a nice lady.

Love that you thought of canning the beef stew! I’m originally from South Dakota so canning was my whole childhood! My dad actually used to cook a big pot of beef stew and then would can it, makes for an easy dinner! Throw it in a pot on the stove or even in a bowl in the microwave! Just some good for thought!

I’m a big fan of buying chicken leg quarters. What I do is bake them off in the oven. I reserve the roasting broth in a jar in the fridge. Later I skim it and store the fat separately. It’s so good to cook with! I strip the meat off the bone after cooling. Some I use right away, the rest goes in freezer bags for meals later. I find you get more meat off the bones after cooking vs before. I separate the skin and the bones. I render the skin down for more fat and the bones go in the instant pot with veggie scraps for bone broth. I keep the broth in jars in the fridge or I pressure can them. The leftover bones are soft and can be easily crushed down for pets. Ironically my chickens love the bone scraps!

BABY DUCKS ARE SO CUTE! I have been wanting some. We don't have a pond though. Grandma saving her cookies is the best thing I've heard. 😁 We are remodeling our kitchen and getting cabinets to the ceiling like yours, I got that idea when you put yours in, lol.

I have one. If it ever gets clogged, mill some rice and it cleans the stones. The rice can then be used as a sauce thickener.

I don't have a pressure canner (yet) but it is so satisfying to can food! I've done quite a lot of water bath canning this summer and fall because I had a large garden for the first time. I just feel so proud of myself when I look at all the jars on the shelf!

I definitely work better in a tidy space too - I treat my bar counter in my kitchen as my “work desk”, and I feel my stress level rising when stuff just accumulates there 😝 and how sweet of grandma to save cookies for the kids! 🥰

Over the years, because I worked long hours, we used to can lots of full meals in a jar: beef stew, sloppy joes, pulled pork and bbq, chicken pot pie filling, chicken and gravy, lots of venison, meatballs and sauce, lots of different soups, you name it. It’s very handy, less waste, saves money and it’s good to know your family is eating well. Was great to take on camping trips, power outages, gifts for new parents, and just never wasted when we bought in bulk. Truly enjoy all your videos and thank you for sharing. 🌻🙏

To make a quart jar of canned beef stew creamy, form a ball with a tablespoon or so of softened butter and the same amount of flour. Heat the contents of the beef stew and drop the “roux ball” in and stir until combined. It takes less than a minute to do this and the flavor is amazing! We also add frozen peas just before serving, lots of good salt and pepper. Never any leftovers! Isn’t canning so rewarding?!

Wow!! you are so organized. I have to admit now that my children are grown I don't feel the need to have a meal ready every night. When the kids lived at home no matter what (even when I was working 40 plus hours a week) I always cooked dinner. I don't mind cooking it is planning the meals that I find to be difficult. Maybe I should start to meal prep for the week so at 5 pm every night I don't have to run around thinking about what we are having for dinner.

Long time prepped her, I would look into a steam juicer, I throw my fruit like apples in it, let them steam down to where I want and make applesauce, at the same time yummy juice... works with any fruit... and go online to Lehman’s.. they have lots of homestead stuff like this

Sarah, cook the chicken thighs (skin and bones included) in your crockpot first. The meat will fall off the bones and the skin will be easy to remove. If you then refrigerate the broth, you can easily skim of the fats that have solidified. I use this method to make anything that includes boned chicken. I then put the bones and broth back into a crock pot with carrots, onions and bay leaves to continue to make rich bone broth. Hope this helps.

I have a mockmill 100 and love it. I haven't had it long and am still learning how to grind things the way I want it to be. I do like that you can put flour back through if you didn't set it fine enough the first time.

Hello Solo! 😂 love your all’s family! I grow up in a family of just 4 (mom,dad,sister,and me) I’m the oldest by 5 years! My dad passed away this January! My mom is 68 years old! My sister had 1 child a soon to be 15 year old in just 14 days! My husband and I have 4 babies in Heaven waiting with my dad for us (some day)! So on my moms side she had 2 older siblings a brother who has passed and a sister (she lives next door) she turned 80 this March! My dad’s side he had 3 sisters and 2 brothers all have passed but the youngest brother! We live in a town of around 5000 people! I wished my sister and I was close like your children but things happen and words are said and prayers goes up but honestly we have never been close! The only time in 39 years I can say we was close was when she was pregnant with her kid! I was at every doctors appointment, ultrasound, and when we went in for my sister to be induced she wanted me there so I stayed until she and Madison(my niece’s name) came home! Then she went through a very bad postpartum! My mom and dad and my husband and I took turns to keep and help with Maddy(nickname) I also call her Monkey lol! During my sister’s pregnancy I was working for an ambulance service and Maddy won’t move around a whole lot so when I would get back and she would hear my voice she would beat my sister up (her words not mine) but from day one finding out that she was pregnant I called her Monkey and still do today! She is in the 9th grade straight A student plays Softball for Varsity and JV! It’s crazy how good she is that both teams wants her to play on both! She is also in gymnastics and has been since she was 3! She is very good at it and has won quite a few metals for that! My husband and I also have 3 nieces on his brothers side oldest is 22 and has a 1 year old boy first boy on my husband’s side of the family since his brother! Then we also have a sat of twins both girls just about to turn 17 in November! Anyway I thought you all always share with us your family just thought I would share a little into mine! ❤ and hugs from Southwest Virginia!

I always add beef bullion powder to my jars then when I dump it out I can use the liquid to make a beefy gravy! 😋 Also, can you do a follow-up on whether you like the mock mill or the nutramill better after using it for a while. I have been debating on getting one and didn’t know which mill to get. Thanks!

Maybe for the stew you could add 1 bay leaf per jar and 1 tsp Worcestershire sauce. That's what I add to my stew and it may make it taste really good.

I work better in a tidy and clean environment as well, and I’m just an accountant that sits at a desk all day! I’ll have out tons of files and papers and clients documents and hi lighters and different colored pens while I’m working on one client or project. But as soon as I’m done with that, I completely clean off my entire desk and put my pens and papers and everything back away like I’m about to go home, lol. My coworkers are always asking if I’m about to leave or leaving early, but o just like to have a clean up and fresh space before I start digging into my next clients documents or a new project. I do this all day long, but it helps me and makes me feel more organized!

Your beef stew looks great! Meals in a jar are one of my favorite things to can. Another good one is chicken, carrots, celery and potatoes to use as a starter for a soup or pot pie.

Sarah the beef stew will be bland but here's my mama's recipe that I've adjusted a bit. Do the same as you did but, maybe add celery then add 1 envelope of Herb Ox sodium free beef bouillon(amazon) or 1 teaspoon of regular bouillon but omit the salt 1/8 t thyme and black pepper how ever much you like. The pressure cooking and storage makes it sooo good. This is in pint jars just play with quart, etc cause we never made those. Blessings y'all! Also please add my 17yo to your prayers. She is having a large fibroid tumor removed at 9 a.m. CST and I am one anxious mama.

I got the MockMill for my Kitchen Aid first, Love it! Then they came out with the oat groats roller and I got that. Oh my! There is nothing like fresh rolled oats! It makes the store bought oats taste horrible! Plus when you roll your own you get to keep ALL the nutrients they take out when commercially produced. I would highly recommend it! Great purchases!

If you put a slice of bread in a ziplock with the cookies it will make them soft again! I don’t know how, but it works lol 😂 love your videos 😊

The best way to get the meat off the bone for chicken is to cook it with it on the bone and with the skin. It will give your dish more flavor. Then once you have picked all the cooked meat off throw the bones and skin into a crock pot and cover with water and cook down for broth. 💜

Trick for getting all the meat off the chicken is to pull it off when it is hot. The meat comes off so much easier. The cooler the chicken gets the harder it is. 💐

My grandson just turned 2 this month and he speaks more Spanish than English because his babysitter speaks only Spanish to him. When we went to Mexico 3 months ago the workers there was amazed that he spoke to them in Spanish.

Please make sure you are following a recipe. Especially with meat. Acidity and salt balance makes a difference to make sure it's preserved.

You do such a wonderful job on food prep. Solo was wise about the ducks, research them well as they can be quite messy especially around your water area. Love to see your children cooking, my sons can cook also but are still married, lol. Hugs

I like a fish boning or fillet knives for making boneless chicken thighs. More often than not, I remove some of the easy to get to fat and discard it. I may or may not skin the thighs but if I do, I throw the skin into the pot. Then I make a stock with some veggies and herbs in the corckpot on slow. From there, I strain, remove and reserve the meat separately, often remove the veggies (or not), often skim znd discard a bunch of the fat with a turkey baster, then return the broth, bones and fat to the crock pot. From there I add upto a bunch more water, the old and/ or new veggies, re-season, and cook the stock into rich both/ thin stock on low for a while longer.

I've had a Mockmill for several yrs now and it's still going strong. I use it to grind brown rice into flour as we use a lot of that as well as wheat flour. The Mockmill isn't as noisy as my other mill was.

I can a pepper steak meal in a jar that’s yummy. Beef, 1” diced green bell pepper, onion, celery, salt & pepper and beef bouillon cube. Fill with hot water and PC. Ready to eat- warm jar contents, add 2TBS soy sauce and thicken with a slurry. Serve over rice. Or rather than raw packed, I like to cook meat halfway in a couple TBSP of olive oil, add raw veggies, salt & Pepper and low sodium soy sauce. Stir it together then jar. Also, if you are using Ball lids go back and double check your seals. The new manufacturer omitted a ridge in the seal which is causes previous sealed jars to unseal. I’ve had 2 jars of ground sausage ruined so far. I’ve switched to ForJars lids & Acre Homestead has a 10% discount code too.
