Ingredients:
3cups all purpose flour
3/4cups warm milk
1tbsp active dry yeast
1egg
2 ripe bananas
3tbsp sugar
1tsp salt
1tsp vanilla essence
3tbs melted unsalted butter or margarine

Hi Phil. This recipe looks easy and yummy. I'm going to try it over the weekend. Phil, you mentioned that if I'm using Instant yeast I should skip the process of activation so do I mix my yeast with the milk and straight into the mashed bananas? I would use 2tsp .Mix it with the dry ingredient then mix it with the wet ingredients

Mandazi comes out better when fried. But an Option would be if you have a donut maker. Because its the same thing only the name changes.

I make a mean banana cake I sometimes flavor with bourbon and top with a honey-butter frosting, or dried blueberries and Shiraz wine with a drizzle of Shiraz icing, or a cake flavored with cinnamon whiskey and cinnamon honey butter frosting. I don't eat the things, I gift them to friends who can survive all that sugar. But your mini-mandazis? These I have to try! The only things on this week's grocery list that I must remember to bring home are bananas!

No need to use yeast whatsoever as you are not baking but frying. Nice snacks though. Also you use certain words that aren't needed in your talk - 'going to'.
