Sounds to me like you should not disturb the rest of the house. You need to just add a hip roof to the addition unless this is going to be a two story addition.

How about some outside the box thinking. Save a general sketchup plan to your google drive, and share it. You'd be surprised how many people have time on their hands to offer suggestions via an edited sketchup file. There's whole community's (where I've shared your garage build) who'd luv to help I think. As far as pressure, great weather does that by removing our procrastinating excuses for not doing stuff... I'm feeling it here right now.... ;)
Very good idea Mat. I have over three years of architectural studio and designed two actual residential remodels, on top of the two full designs in the studio. It energizes me to be creative and design. My suggestion is extrude the main roof as it is, in addition, extrude the existing shed dormer. This then give you the height desired in the bath. Also by extruding forms, blend the addition in rather than making new form. If new form, need to have expressed itself as unique, 1'-0" all it takes, however already gone passed this with flush on one side. As for structure, build temporary walls just outside of the point where the collar meets the rafter. However, might be able to add the shed dormer without removing the collar? If forming your ceiling and the dormer ceiling, would think the collar then also tie the dormer also. Hope this helps.
Make this a 3 story addition and get the roof of the addition above the rest of the house so you will not have to redesign the existing roof, and just put dormer windows in that bedroom.
Greg Wallace that's a good ideal. Especially the dormer windows. He could even keep this a two story addition, keep the knee wall roof line of the existing roof. It'd look a little funky but would work.
I say build the addition Higher than the rest of the house with a flat roof that has a roof top deck with an open air metal roof with enough a pitch to get rid of the snow. You could have a small outdoor kitchen and just think of how you would Enjoy the beautiful scenery that is all around you. Put dormers in the existing bedroom, problem solved. Two stories of complete coolness. Everybody like funky!
